This is what I love about plant-centric foods: the colours. So vibrant. So hydrating and refreshing – both visually and nutritionally.
This salsa can be enjoyed in many different ways: on its own, as a dip, on top of tacos or inside a burrito wrap… but as if you need an excuse to devour this. You’re finished it already, aren’t you?
And it takes only 5 minutes to prep. I hope it takes longer than 5 minutes to eat, though. It warrants savouring.
I made this salsa to pair with the Purple Burrito Bowl I made (recipe here). The burrito bowl itself is very simple, but this here salsa jazzes it up. I mean, avocado and mango? Match made in heaven.
Chunky Avocado Mango Salsa
▸ ▹ Vegan, raw, gluten-free, oil-free, soy-free, refined sugar-free, nut-free
Yield: 3 cups
Prep Time: 5 min
Total Time: 5 min
1 avocado, cubed
1 large mango (or 2 small), cubed
2 medium tomatoes, cubed
½ lime, juiced (~1 Tbsp or 15 mL)
¼ cup (15 g) cilantro, diced
½ medium red onion, diced
Place all ingredients in a bowl, toss, serve, enjoy!
