    medium tomatoes, diced
  • ½
    small red onion, minced
  • ⅓ cup (8 g)
    fresh basil, thinly sliced
  • 2
    cloves garlic, minced
  • 1 Tbsp (15 mL)
  • 1 tsp (5 mL)
    extra virgin olive oil
  • ½ tsp
    garlic powder
  • ¼ tsp
  • ⅛ tsp
    ground black pepper
  • 1
    medium baguette, cut into rounds, toasted


  1. Add all of the ingredients to a medium bowl and gently toss until combined.
  2. Although the dish can be enjoyed immediately, it’s best to cover the tomatoes and let them sit in the fridge for at least 2 hours to allow the flavours to meld, if possible.
  3. Serve fresh on toasted bread, or even toast together with the bread in the oven for a warm bruschetta. Garnish with fresh basil if desired. Enjoy!


  • Best to enjoy the same day it's made.
  • Store in an airtight container in the fridge for up to 1 day.

I wanted to use up the balsamic reduction from your other recipe so I decided to use it in this one. I had the bruschetta after my morning workout (with hummus, as per the suggestion from the video) and now I'm ready to attack my day 🙃 very tasty and filling 😋
