Kale is an incredibly nourishing veggie, but it can be tough and bitter. An easy way to soften the texture is by making a pesto with it. We added a handful of fresh basil for the aromatics and a kiss of maple syrup to make it sweeter, which cuts through the natural bitterness from the kale. The result is a vibrant and wholesome sauce that's perfect to serve on some toasted bread or mix into a delicious pasta dish.

I had lots of kale to use up so this was perfect, thank you. I used a little bit less lemon than the recipe called for and omitted the maple syrup completely.

Yum!! Green gold! I made this today with kale, basil and some leftover spinach - recommend playing around a bit with the zest and sweetness until it's just how you like it 🌱 This will go in my pasta next week, and maybe I will even drizzle it over PUL's Whipped Tofu and Tomato Toast! Such an easy and delicious hack for getting your greens!
