Avocado Toast with Chipotle Bean Spread

Chipotle bean spread

1½ cups (250 g)cooked cannellini beans

4slices multi-grain bread

1 tsp (5 mL)olive oil

1 cup (164 g)canned corn, drained, rinsed

1avocado, sliced

1stalk green onion, thinly sliced
Optional garnish

Directions
- Add all of the bean spread ingredients to a small food processor. Blend until smooth.
- Add the oil to a large pan on medium-high heat. Grill the bread for 1 - 2 minutes per side, or until toasted. Set aside.
- Add some more oil to the now-empty pan. Add the corn and cook for 4 - 5 minutes, stirring occasionally, or until the corn has some golden brown spots.
- Top the toasted bread with chipotle bean spread, corn, avocado, and green onion. Garnish and enjoy!
Storage
- The spread can be stored separately from the bread and the toppings in an airtight container in the fridge for up to 4 days.

Such a delicious way of enjoying toast. I added extra chipotle as I can’t get enough of it. This was also a spontaneous dinner for me, so I was missing just one ingredient, the green onion, so we subbed it for fresh cilantro. My husband and I loved this one! I’d definitely remake as it was so quick and easy to work up.
I had to use chickpeas instead and I was not expecting to love this recipe so much. It's going to be a go to breakfast from now on!

I absolutely loved this dish! The recipe was incredibly easy to follow and so delicious. I added a splash of water to the bean spread to help it blend nicely and swapped out chipotle for cayenne pepper, which gave it a perfect kick. Highly recommend trying it!
This is both refreshing and indulgent somehow. Definitely a treat as a lunch snack.
Super easy and delicious! I think the spread easily covers 6 slices. I ran out of nutritional yeast and subbed it for vegan feta. Also very good 😊
I absolutely LOVE this food! Did not this recipe include black sesame seeds at some point in the past...? In any case, I always sprinkle those on top in addition and it's both beautiful and delicious!
SO GOOD…I didn’t have recommended beans on hand so used a can of chickpeas instead and added a splash of water. Otherwise followed recipe to a T- balance of flavors is amazing and much more filling than traditional avocado toast.

I LOVE this recipe! I've also made it for my non-vegan boyfriend and it's one of the few breakfasts he'll say doesn't make him miss having eggs. I sometimes just make the chipotle bean dip (even if I'm not making the full recipe here) to keep on hand throughout the week for snacks or sandwich spreads, or to put out as part of an appetizer spread if I'm having people over.

I had no Chipotle sauce, so I subbed it with sambal and soy sauce. It worked just as well!
For those who do not have a chopping machine: mine is broken so I used a masher (in the Netherlands we use it to mash our stamppot). Turned out fine!

I'm always willing to try new avocado toast variations and this one did not disappoint! I love the chipotle flavour and also love that it's also high protein too! Thanks for the inspiration PUL! I might try to experiment with other high-protein additions to avocado toast. Maybe with an edamame dip/spread blended with some tahini, miso, and ginger... wish me luck haha :)
