This flavour-packed hummus is delicious on its own, but it's also great on sandwiches or wraps. The caramelized bell pepper and garlic are muted in their intensity, and add a lovely sweetness to this hummus.

Ingredients

    large red bell peppers, seeds removed
  • 6
    cloves garlic, peel attached
  • 1 Tbsp (15 mL)
    olive oil
  • 2 cups (370 g)
    cooked chickpeas
  • 3 Tbsp (45 mL)
  • 1
    lemon, juiced
  • 1 Tbsp (15 mL)
    olive oil, or more if desired
  • 1 Tbsp (15 mL)
    cold water
  • 2 tsp (10 mL)
  • ½ tsp
    paprika powder
  • ½ tsp
    salt

  • ground cumin
  • paprika powder
  • roasted chickpeas
  • roasted red bell pepper

Directions

Click:

  1. Preheat the oven to 450°F (250°C).
  2. Add the bell pepper and garlic to a parchment-lined baking tray. Toss with oil, and bake in the middle rack of the oven until the garlic peel is golden, and the bell pepper is lightly charred, about 25 minutes. Stop to flip the bell peppers once halfway.
  3. When the bell peppers have cooled enough to handle, remove any charred bits from the bell peppers, if desired. Remove the peel from the garlic cloves.
  4. Place all the ingredients in a food processor and blend on high until well combined, stopping to scrape down the sides as needed, until creamy. The longer you blend, the creamier the hummus becomes.
  5. If you'd like the hummus even creamier, add more olive oil and/or tahini. If you'd like the hummus to be zestier, add more lemon juice.
  6. Plate, garnish, and serve!

I have never attempted to make Hummus from scratch do I have a question. How long to you cook the Chickpeas? Do you just boil them? I love Hummus and would love to have fresh available whenever I wanted it!

Hello Sarah, thanks for the question! Canned chickpeas are already cooked so only a good rinse is necessary before using them. If cooking dry chickpeas, usually giving them a soak and then cooking them covered with around 2 inches of water above the top of the beans works well. The exact time, heat, and amount of water may depend on the soak time, cooking method, and amount being made. There are lots of recipes online in case that will help further. We hope you enjoy the hummus if you're able to give it a try 😃

So good! I garnished it with toasted pine nuts, some finely chopped roasted red pepper, ground oregano and a little more paprika. Great flavor and very pretty presentation!

Slightly sweet hummus. It used up the entire jar of roasted peppers! I think I still prefer your beet and avocado hummus better.

Just tried this delicious recipe, my first self-made hummus ever and I m absolutely enthusiastic about it. So creamy, and the flavour of the roasted bell pepper gives it a great and special twist and taste to the traditional hummus. Not expensive and easy to make....successful the first time (I m not the most talented cook ;) ) Thank you for the recipe!

I did like Agate: I used roasted bell peppers from a jar. So convenient without compromising the taste. Love this variation with bell pepper and garlic as well as the balance between sweet, sour, and umami. I really need to add more salt when I make your hummus recipes, as I use a brand that doesn’t add salt to their canned chickpeas... Which is very good though👏🏼

Love this recipe! Its also quite quick, if your local store has roasted bell peppers in a jar. My recommendation though - don't be afraid to adjust seasoning to your taste buds. I typically add more lemon juice and add more salt in the form of soy sauce. After discovering this recipe I have stopped buying ready-made hummus - this is way more delicious and cheaper!
