This was delicious! I especially love the sauce/dressing (like another commenter, I used canned peppers because it is too hot in Spain for the oven. Next time, I’m going to add some chickpeas or vegan feta for an extra hit of protein!

Very easy to make. I wasn't too fond of the arugula in this, but the dressing will work with any good salad base, so definitely making it again.
