Directions
- Using a box grater, grate the cucumber. Drain off the excess liquid by squeezing the grated cucumber firmly with your hands.
- To a bowl, add the pressed cucumber along with all the other ingredients. Mix, and enjoy!
Notes

This sauce is SO GOOD! I paired it with the PUL green pea falafel recipe, wrapped in naan bread with hummus and greens and it was just as good as what I've had at restaurants (actually better because it felt more wholesome). I will definitely make this again :)

The best tzatziki recipe ever! I love how quick and easy it is. The first time I made it I forgot to squeeze the grated cucumber and have since learnt from this mistake. It perfectly accompanies a whole host of other recipes.

I love this. Before this recipe I wasn't able to try tatziki because I'm lactose intolerant (and now living that dairy-free life). I use an unsweetened coconut milk yogurt and find it's very delicious. It's a very refreshing sauce with falafel!
Delicious! I made this a handful of times. I sub soy yogurt for unsweetened vegan coconut yogurt by Riviera. I omit the oil as I am oil free and it is delicious! The whole family really enjoys it.
