Hummus is a classic for a reason. This is a go-to hummus recipe. It's a great spread for sandwiches, wraps, and crackers. It's a phenomenal dip for veggies. It can be used as a base for pasta sauces and salad dressings, and it can be dolloped onto nourish bowls. Is there anything it can't do?

Ingredients

  • 1½ cups (246 g)
    cooked chickpeas
  • 1
    lemon, juiced
  • 2 Tbsp (30 mL)
  • 1 Tbsp (15 mL)
    extra virgin olive oil
  • 2
    cloves garlic
  • ½ tsp
    salt
  • ¼ cup (60 mL)
    ice water

Optional garnish

  • fresh basil
  • ground cumin
  • pomegranate seeds

Directions

  1. Add all of the ingredients, except for the water, to a food processor and blend on high until smooth.
  2. While the mixture is blending, in a thin and steady stream, add half of the ice water to the food processor*. If desired, skip this step by simply adding the water in with the ingredients in step #1.
  3. Taste test the hummus. If too thick, add the remaining water. For a creamier consistency, add more olive oil and/or tahini. For more zest, add more lemon juice. Plate, garnish, and serve!

Notes

  • * Adding the water in this way helps to aerate the hummus and make it more 'fluffy'.

Hi PUL, I made this tonight with 3 cups of cooked chickpeas (so doubled the base recipe) but it turned out way too watery, it was like a hummus soup. I didn’t use the full amount of water either. Flavour is great though, next time I might skip adding the water

Hey there, Flick, thanks for sharing your experience with it. I suspect the difference might come from tahini. You'll need more water if the tahini is rather thick and almost solid, which must have been the case when we made it. If the tahini is rather thin, less water is needed. It's a good note, and one we've just added to the directions to make it clear for others as well, so thanks again for sharing your experience! 🤗

Happy to report attempt number 2 was much more successful! Indeed my tahini might be on the runnier side, so today I made it without adding any extra water and it turned out beautiful. I also halved the garlic and lemon because I found it a bit strong for my taste. Thank you for an awesome recipe!

Hi, The recipe calls for cooked chickpeas. This is probably a very stupid question, but I'm not familiar with chickpeas, sorry. How did you cook them? I have canned chickpeas. How do I cook them to prepare for this recipe?

Hey Heather, thanks for the question and no need to apologize at all! Canned chickpeas are pre-cooked so you can strain and rinse them, and then they're ready to use. If you have dry chickpeas, such as from the bulk section, though these would need to be cooked and it may be easiest to follow a recipe from online for ease 🙂

Delicious! The only problem with this hummus is that I can't stop putting it on everything :D The garnishes really make it a feast for the eyes too. I've been watching your videos for at least 4 years and I've only just started using the PUL website as I now have a good set up for cooking as well as the mental space to dedicate to creating plant-based meals. Now instead of just drooling over the recipes in PUL videos, I get to make them and I have so many bookmarked!

I come back your channel time and time again, not only because the food looks incredible, but because of the wonderfully warm presence you bring and how it's obvious that you've put so much thought and consideration into the lives of your viewers with how recipes/advice videos could be adapted to them. It inspires me to try to bring more of this light into the world, too!

As someone who suffered from an eating disorder for over a decade and am now a few years into a good place, getting back into healthy and plant-based eating has historically led to a spiral when I would inevitably start thinking about the numbers. Admittedly, this week I did scroll down to check the nutrition in one of your recipes and instead found your philosophy to 'Nourish the Cells & the Soul' and it really made me take a step back. I haven't looked for the numbers since.

Best hummus yet, but unfortunately my food processor isn’t strong enough to make it store bought- smooth. Should I boil the canned chickpeas for it? Any tips?

Hi Anna, thank you for sharing! Canned chickpeas are already cooked, so boiling them further may not help too much. Adding more liquid (such as water) or allowing the mixture to blend for longer should help with smoothness if your food processor isn't powerful enough ☺️

Hey Rachel, that’s a great question! We wouldn't recommend a hand blender as your hand blender could break. Your ninja cup may work if you find it powerful enough and break up the recipe portions though! If you hear any weird sounds or smell anything unexpected, it likely would be best to stop blending though ✨🤗

Hey Michael, wonderful thinking! It should be around 1.5 cups or 370 grams per recipe although it may vary slightly depending on some factors, such as how big the garlic cloves used are, how much lemon juice is used, etc. We hope you love the hummus pasta 😃

My boyfriend usually makes hummus for us for the week, he just wings it and always does something different. This week we didn't have time to do it over the weekend but I had time to do some while he was working. I was stressed that it wouldn't turn out as good as his but I followed this recipe and it turned out so so good, topped it off with a bit of olive oil and paprika to dip pita in and it was great, my boyfriend even said "it's sooo good, I want more" after we finished our snack.

Seriously, this hummus is really fresh and works so well for an afternoon snack (fika!!). I added a 1/4-1/2 teaspoon of ground cumin for default servings, which pop up the lemon and garlic flavours. I love PUL’s hummus and I crave for more 🤣😉
