Pasta salads usually use loads of oil in the salad dressing, but this recipe calls for tahini as the base. That means the dressing is super creamy, and with the added bonus of the fat coming from a whole food source.

Pasta salad

  • 3 cups (288 g)
    dry fusilli pasta
  • ½ cup (92 g)
    cooked chickpeas
  • 2
    red bell peppers, chopped
  • ½
    cucumber, chopped
  • ½ cup (4 g)
    fresh dill, chopped
  • ½
    small red onion, minced
  • ½ cup (75 g)
    kalamata olives, halved

Dressing

  • ½ cup (120 mL)
  • 1
    lemon, juiced
  • 1
    clove garlic
  • ½ cup (120 mL)
    water
  • 1 Tbsp (15 mL)
    olive oil
  • 1 Tbsp (15 mL)
    red wine vinegar
  • ½ tsp
    ground cumin
  • ½ tsp
    paprika powder
  • ⅛ tsp
    salt

Directions

Click:

  1. Cook the pasta per packaging instructions until al dente. Once cooked, drain, rinse under cold water, and set aside.
  2. Add all the dressing ingredients to a blender, and blend on high until creamy. Alternatively, add the ingredients to a bowl (with the garlic crushed), and whisk.
  3. To a large bowl, add all the salad ingredients and the dressing, tossing until everything is well combined. Enjoy!​

Storage

  • Store in an airtight container in the fridge for up to 4 days.
  • Best if the dressing is stored separately from the salad until ready to enjoy.
