SO YUMMY! I had it last night with a side of the hassleback potatoes.
I did not have any fennel but it’s amazing with out it. The lemony dressing is so good!

Wow this was amazing 😍 The pear was definitely the star but all the other ingredients just perfectly complimented each other as well.
I'm trying to integrate quinoa into my diet and I think I found the winning recipe.
Used chickpea to substitute the beans and used millet instead of quinoa. I really love the dressing!
This salad is amazing. We took it on a picnic and it held up lovely. I packaged the quinoa, mint, dill, feta together. We kept in separate containers the watermelon radish, cucumber and the baked toppings. One slight variation- I used chickpeas instead of butter beans. And I baked the chickpeas separately with a maple thyme and olive oil coating until crisp. The flavors of all ingredients complimented each other so well and it was an absolute delight to eat outside. Will definitely be making this again. Thank you!!
It was so so good! I swaped Quinoa with Millet and used spring onions insted of red onion. Our Child said: „Hmm Mummy! You can cook very good!“ 🥰

It's light but filling, creamy and crunchy, sweet and sour - won-der-ful!
I think its also good in the summer. Then maybe with apples and Kohlrabi? We will see 😁
I left out the radices and used dried dill and it was still delicious!
