This salad is everything I crave in one bowl: crisp greens, creamy avocado, hearty lentils, and a tangy, herby dressing that ties it all together. The real star is the crunchy pita chips tossed in za’atar, adding a delightful texture and bold flavour. It’s light and refreshing, yet surprisingly filling.

Loved the dressing for this! I used my pestle and mortar to make it and that works brilliantly as well. Will say that the smallest of garlic cloves is advisable. The garlic adds a lot, but it's still raw and can have a bit of a bitter aftertaste. If it was roasted it would be perfect, so next time meal planning this when I make the roasted garlic potato pizza.

This was fantastic! I used frozen herbs instead of dried, omitted the avocado and also replaced the pitas with tortillas since I didn’t have any at home.

The ingredient list says “dry” brown lentils - does this mean they are uncooked?

Hey Melissa! Oh goodness, thanks for flagging this for us. We meant 1 cup of cooked lentils, which we've just updated in the recipe - thanks again for sharing! 🤗
