Ingredients

Sweet potato tray bake

  • 3
medium sweet potatoes, cut into 1 cm cubes
  • 1
    medium red onion, sliced
  • 4
    garlic cloves, peel left on
  • 1 tsp (5 mL)
    vegetable oil
  • 1 tsp (2 g)
    ground cumin
  • ½ tsp
    paprika powder
  • ¼ tsp
    salt
  • 1 pinch
    ground black pepper

Kale salad base

  • 4 cups (100 g)
    kale, stems removed, chopped
  • 1 Tbsp (15 mL)
    olive oil
  • 1½ cups (246 g)
    cooked chickpeas
  • 1
    avocado, diced
  • ¼ cup (34 g)
    roasted unsalted almonds, chopped

Dressing

  • 1 Tbsp (15 mL)
    olive oil
  • 1
    lemon, juiced
  • 6
    fresh mint leaves, thinly sliced
  • 1 Tbsp (15 mL)
  • 1 Tbsp (15 mL)
  • ½ tsp
    onion powder

Directions

  1. Preheat the oven to 410°F (210°C)*. Add all the tray bake ingredients to a baking tray and toss to coat.
  2. Bake for 25 minutes, or until the potatoes are fully cooked through. Stir once halfway.
  3. Meanwhile, in a large bowl, add the kale and drizzle over the olive oil. Using your hands, massage the kale for 1 - 2 minutes to soften it.
  4. Add the dressing ingredients to a separate medium bowl. Peel the roasted garlic cloves and mash them into the bowl.
  5. When the potatoes have cooled, add them to the salad bowl along with the chickpeas, avocado, and dressing.
  6. Toss everything to coat. Sprinkle some roasted almonds on top, and enjoy!

Notes

  • * We used top and bottom heating (not fan-assisted/convection).

Storage

  • Best if enjoyed immediately.
  • Store the salad separately from the dressing in airtight containers in the fridge for up to 3 days.
  • Ideally, add the avocado only when ready to enjoy to avoid browning.

Hi Sadia,
I don’t usually enjoy sweet potato as much as I did in this recipe, the salad as a whole tasted great. I’m somewhat lazy at the kitchen so I look for the easiest recipes and this one was a fast one. I’ve been following you for the last four years or so and I wanted to congratulate you for your amazing work and attention to detail. I’m not vegan but I try to incorporate more veggies in my life so your recipes work great. My home staple recipe I must say is the almond coconut granola, can’t live without it. Also started indoor gardening with your videos :). Congrats again. I wish you a lot more years of success!

Aww thank you so much for your kind words and for being a part of this journey for the past four years, Claudia! We're so happy to hear that you enjoyed the salad with sweet potato and that the almond coconut granola has become a staple in your home. Wishing you continued success with your indoor gardening and veggie-filled meals 💛

Love this salad, tastes very good, I used limes instead of lemons and it still works!

Shaunagh - Aug. 8, 2024, 6:08 p.m.

Yummy

Gabbie Duarte - Aug. 6, 2024, 2:17 a.m.

It’s the best salad I’ve ever made however I used only one large sweet potato and also steamed the kale for 3 minutes so kill the bitterness after massaging it with olive oil. Next time I will use more than 100g of kale or less chickpeas because the ratio was not very good.

Naomi - July 29, 2024, 7:49 p.m.

The kale has a very bitter taste. What am I doing wrong?

PUL small logo PUL Team - July 30, 2024, 12:43 a.m.

Hi Naomi, it sounds like the kale might be a bit too raw or not massaged enough. Try massaging it with olive oil for a few more minutes to help soften the leaves and reduce bitterness. Adding a bit of lemon juice or vinegar to the dressing can also help balance out the flavour. If it's still too bitter, consider adding a bit more maple syrup. We hope this helps! 🤗

Gabbie Duarte - Aug. 7, 2024, 12:02 a.m.

You can steam the kale for about 3 minutes or until you notice the green color pop more. It’s a lot faster, but don’t over do it because it will be mushy.

Kathy - July 24, 2024, 3:04 a.m.

The overall concept was good. Roasted potatoes & onions were done, garlic needed more time. I would use black beans instead of garbanzo beans, & omit the mint. Two sweet potatoes were plenty, did not need 3. I would make again, with these changes.

Hannah - July 22, 2024, 5:36 a.m.

Best salad I've had in ages! I never really liked raw kale, but I decided to try it one more time, and I'm so very glad I did. I believe you have converted me!

PUL small logo PUL Team - July 22, 2024, 2:09 p.m.

Yayy what a big compliment, Hannah! In case you're interested in trying a different take on kale, we find "massaging" it can work wonders. We have a Massaged Umami Kale Salad recipe here: https://www.pickuplimes.com/r… 😊

Julia Swan - July 17, 2024, 6:26 p.m.

Just tried it, and it is very delicious! That dressing is adding a very nice touch 😋

Heidi - July 12, 2024, 2:43 p.m.

The dressing is really good. I added tomatoes to the salad and next time I will roast the chickpeas. Do you have a roasted chickpea recipe?

PUL small logo PUL Team - July 12, 2024, 6:50 p.m.

A lovely idea to add tomatoes, Heidi, and thanks for the question! We don't have a plain roasted chickpea recipe yet, but you could follow our ranch-flavoured roasted chickpea recipe and omit the ranch flavourings: https://www.pickuplimes.com/r… 🤗

Jonathan - July 18, 2024, 10:06 p.m.

If I might add, the roasted chickpeas in the High-Protein Balsamic Tomatoes on Whipped Garlic Tofu: https://www.pickuplimes.com/recipe/high-protein-balsamic-tomatoes-on-whipped-garlic-tofu-1747 are epic as well :-) (and I would definitely recommend the whole recipe as well)

Elizabeth B - May 29, 2024, 10:20 p.m.

Loved this recipe! I roasted the chickpeas as well for more texture (all in the air fryer) and added cranberries on top to finish. Delicious dressing with the mint!

Woohoo! Thank you for taking the time to share your experience with the salad, Elizabeth 🙌

Steve Elliott - May 27, 2024, 1:50 p.m.

Surprisingly delicious. I've never been a fan of Kale, and this recipe doesn't even cook it, however I do really enjoy sweet potato. I have to admit this recipe will be a regular in my diet now though.

Rachel - May 17, 2024, 11:57 a.m.

Sooooo good! The mint really added a lot, I almost skipped it because I didn’t have fresh but I used dry and it really brought some great flavour. Don’t skip it! :) I’ve also never taken the time to massage kale before but it made a huge difference. Thanks!

Jenny Lou - May 14, 2024, 6:42 a.m.

Oh my this is so good! I especially love the mint! I used minced onions instead of onion powder. Thank you for this recipe!

Sarah - May 14, 2024, 12:40 a.m.

Completely, utterly delicious. Added about a tsp of salt to the kale, but otherwise, chef's kiss!

pratyusha - May 13, 2024, 12:58 a.m.

Just amazing!

Dee - May 10, 2024, 4:56 p.m.

I LOVED this salad! I added sunflower and hemp seeds instead of almonds. Also, I forgot to buy mint at the store. I’m making this again this weekend for guests and I know they will enjoy it. I plan to double or triple the dressing and I won’t forget the mint this time. 😊

PUL small logo PUL Team - May 10, 2024, 9:47 p.m.

Aww we're happy to hear it was enjoyed, Dee! Happy cooking 🙌

Katie - May 7, 2024, 7:16 a.m.

Makes me extra happy eating and digesting. Excellent!!! Thank you PUL.

magda - April 26, 2024, 2:07 p.m.

Thank you for this delicious recipe! Didn't know what to expect from kale but it was very pleasant to eat prepared in this way. Leftovers were even more delicious the following day! Next time, I'll double or triple the mint because I love it and can never have enough, haha!

Ella - April 25, 2024, 4:28 a.m.

Nice flavors but needs more textural variation. I added sunflower seeds on top of the nuts but that was still not enough. to offset the mushiness. I would suggest swapping out some of the kale and/or roasted onion for raw radicchio (in addition to sunflower seeds!) I think that would add a nice level of crunch. Also I think you could easily increase the mint by at least half if you want a more flavorful dressing, I used 6 leaves and it was good but understated.

PUL small logo PUL Team - April 26, 2024, 4:49 a.m.

Thanks for sharing your experience with the salad, Ella!

Andrea - April 24, 2024, 7:05 p.m.

Absolutely fabulous!

Lina - April 24, 2024, 2:28 p.m.

Simply fabulous!! The dressing is on point, and this being my first time massaging kale I was really impressed with the results. I swapped almonds for walnuts because it's what I had. The taste was even better the second day and the textures held up well!

Sofia - April 23, 2024, 9 a.m.

Made this for dinner tonight and it was so good! Nutritious and satisfying. The mint adds such a fresh touch. Will be making again. Thank you for the recipe 🙏

PUL small logo PUL Team - April 24, 2024, 6:48 a.m.

So glad that the salad was enjoyed, Sofia! 🙂

Diane M Donovan - April 23, 2024, 4:52 a.m.

So good, such a wonderful blend of flavors! Massaging the kale worked, and instead of avocado I added a snack-size guacamole to the dressing. The lemon in the dressing will keep the guac from browning. This is definitely a keeper!

PUL small logo PUL Team - April 23, 2024, 5:41 p.m.

Mmm a lovely idea to use guacamole, Diane! Thanks for sharing your experience with the salad 🤗

Leah - April 18, 2024, 5:31 p.m.

I made this earlier this week and it was so good that I’m going to make it again today! I already had some roasted sweet potatoes in my fridge, so I quick pickled the onions and they were great on this salad. I agree with others, the dressing is great!

PUL small logo PUL Team - April 19, 2024, 7:11 a.m.

That sounds fantastic! Pickled onions add such a nice zing, and it's wonderful that you enjoyed the dressing. Enjoy your second round of the salad, Leah ☺️

Carolina - April 14, 2024, 10:32 p.m.

This was amazing, even my husband who doesn’t like kale loved this recipe! I didn’t have red onion or maple syrup but yellow onion and agave worked perfectly fine. So much fiber and a kick of protein from the chickpeas makes this salad a winner!

Csilla - Feb. 21, 2024, 1:03 p.m.

I have never eaten a raw kale until now and I was afraid at first, but the taste is incredible.
My only problem is that i chopped the kale too large, and its takes some time to chew it :D

Super easy to put together, and I LOVE the red onions and roasted garlic in this. The dressing was a little sharp for me, so I may add some tahini and decrease the vinegar slightly next time.
I was worried that the leftovers wouldn’t keep because I had mixed everything together, but they were still good the next day!

Wow! I did not expect it to taste that good because it's kale 😅. I am from Philippines and the ingredients in this recipe are not staples in our country, which is why there were a few things that I did not expect from this dish. The sweet potatoes - which are super delicious I could eat them all by themselves - and the sauce are the best about this dish, for me. I realized that I did not make enough after I had finished a bowl of this dish by myself. Can't wait to make it again and bring it to work 😍.
