Ingredients

Tray bake

  • 3
medium sweet potatoes, cut into 1 cm cubes
  • 1
    medium red onion, sliced
  • 4
    cloves garlic, peel left on
  • 1 tsp (5 mL)
    vegetable oil
  • 1 tsp (2 g)
    ground cumin
  • ½ tsp
    paprika powder
  • ¼ tsp
    salt
  • 1 pinch
    ground black pepper

Salad base

  • 4 cups (100 g)
    kale, stems removed, chopped
  • 1 Tbsp (15 mL)
    olive oil
  • 1½ cups (246 g)
    cooked chickpeas
  • 1
    avocado, diced
  • ¼ cup (34 g)
    roasted unsalted almonds, chopped

Dressing

  • 1 Tbsp (15 mL)
    olive oil
  • 1
    lemon, juiced
  • 6
    fresh mint leaves, thinly sliced
  • 1 Tbsp (15 mL)
  • 1 Tbsp (15 mL)
  • ½ tsp
    onion powder

Directions

  1. Preheat the oven to 410°F (210°C)*. Add all the tray bake ingredients to a baking tray and toss to coat.
  2. Bake for 25 minutes, or until the potatoes are fully cooked through. Stir once halfway.
  3. Meanwhile, in a large bowl, add the kale and drizzle over the olive oil. Using your hands, massage the kale for 1 - 2 minutes to soften it.
  4. Add the dressing ingredients to a separate medium bowl. Peel the roasted garlic cloves and mash them into the bowl.
  5. When the potatoes have cooled, add them to the salad bowl along with the chickpeas, avocado, and dressing.
  6. Toss everything to coat. Sprinkle some roasted almonds on top, and enjoy!

Notes

  • * We used top and bottom heating (not fan-assisted/convection).

Storage

  • Best if enjoyed immediately.
  • Store the salad separately from the dressing in airtight containers in the fridge for up to 3 days.
  • Ideally, add the avocado only when ready to enjoy to avoid browning.

Thank you for this delicious recipe! Didn't know what to expect from kale but it was very pleasant to eat prepared in this way. Leftovers were even more delicious the following day! Next time, I'll double or triple the mint because I love it and can never have enough, haha!

Ella - April 25, 2024, 4:28 a.m.

Nice flavors but needs more textural variation. I added sunflower seeds on top of the nuts but that was still not enough. to offset the mushiness. I would suggest swapping out some of the kale and/or roasted onion for raw radicchio (in addition to sunflower seeds!) I think that would add a nice level of crunch. Also I think you could easily increase the mint by at least half if you want a more flavorful dressing, I used 6 leaves and it was good but understated.

PUL Team - April 26, 2024, 4:49 a.m.

Thanks for sharing your experience with the salad, Ella!

Andrea - April 24, 2024, 7:05 p.m.

Absolutely fabulous!

Lina - April 24, 2024, 2:28 p.m.

Simply fabulous!! The dressing is on point, and this being my first time massaging kale I was really impressed with the results. I swapped almonds for walnuts because it's what I had. The taste was even better the second day and the textures held up well!

Sofia - April 23, 2024, 9 a.m.

Made this for dinner tonight and it was so good! Nutritious and satisfying. The mint adds such a fresh touch. Will be making again. Thank you for the recipe 🙏

PUL Team - April 24, 2024, 6:48 a.m.

So glad that the salad was enjoyed, Sofia! 🙂

Diane M Donovan - April 23, 2024, 4:52 a.m.

So good, such a wonderful blend of flavors! Massaging the kale worked, and instead of avocado I added a snack-size guacamole to the dressing. The lemon in the dressing will keep the guac from browning. This is definitely a keeper!

PUL Team - April 23, 2024, 5:41 p.m.

Mmm a lovely idea to use guacamole, Diane! Thanks for sharing your experience with the salad 🤗

Vanessa Alliaon - April 23, 2024, 1 a.m.

Hope Lucker - April 19, 2024, 10:04 p.m.

My Mother and I just made this today. Absolutely delicious! We aren’t vegan so we enjoyed it with an egg on the side with some Labneh and flatbread. Well done Pick up Limes! You’ve done it again💕

Leah - April 18, 2024, 5:31 p.m.

I made this earlier this week and it was so good that I’m going to make it again today! I already had some roasted sweet potatoes in my fridge, so I quick pickled the onions and they were great on this salad. I agree with others, the dressing is great!

PUL Team - April 19, 2024, 7:11 a.m.

That sounds fantastic! Pickled onions add such a nice zing, and it's wonderful that you enjoyed the dressing. Enjoy your second round of the salad, Leah ☺️

Anna and Saurabh - April 17, 2024, 6:59 a.m.

My husband and I really enjoyed this salad! Such a nice combination of flavors and textures. And the sweet potato and chickpeas elevate the salad to a filling meal.

Carolina - April 14, 2024, 10:32 p.m.

This was amazing, even my husband who doesn’t like kale loved this recipe! I didn’t have red onion or maple syrup but yellow onion and agave worked perfectly fine. So much fiber and a kick of protein from the chickpeas makes this salad a winner!

PUL Team - April 15, 2024, 5:53 a.m.

Yayy it means so much that the sweet potato & kale salad is being enjoyed, Carolina! Love the substitution ideas as well 🫶

Kristy - April 13, 2024, 2:29 a.m.

Susanne Colella - April 10, 2024, 3:41 a.m.

What kind of kale did you use?
Love your recipes 💕
Thanks

PUL Team - April 10, 2024, 6:34 p.m.

Hi Susanne! We used curly kale, but any type will do 😊

Ari - April 2, 2024, 12:20 a.m.

So good!

Lisa - March 30, 2024, 12:24 a.m.

Love the salad, however I didn’t have chickpeas, so I used black beans instead.

msjobrien87 - March 18, 2024, 6:55 p.m.

This salad was absolutely delicious and easy to make. I separated the trey bake, kale, and dressing into separate containers so I could take it to work for lunch the next 3 days. Worked well.

Ola - March 13, 2024, 8:12 p.m.

The best salad I’ve ever eaten! Thank you for this recipe 🤩

Csilla - Feb. 21, 2024, 1:03 p.m.

I have never eaten a raw kale until now and I was afraid at first, but the taste is incredible.
My only problem is that i chopped the kale too large, and its takes some time to chew it :D

PUL Team - Feb. 21, 2024, 5:30 p.m.

Ooo love adventuring with new ways to enjoy food. We're glad to hear it was a success, Csilla, and are excited for more kale adventures!

Julie - Feb. 18, 2024, 3:54 a.m.

Nice to have a delicious kale salad without dried cranberries in the recipe! Love the fresh mint dressing! Brilliant!

Shayda - Jan. 22, 2024, 9:37 p.m.

Oh my goodness, sooo good and balanced! I would just say it needs more dressing. Going to double up on the dressing to add as needed next time!

Edna - Jan. 18, 2024, 8:04 p.m.

Great salad! Super nutritious and very yummy! I'm not vinaigrette person but this one is fantastic!
I will definitely be making it again. It's a great way to eat kale and get a good source of iron!

Thank you PUL. 😍😍

PUL Team - Jan. 19, 2024, 5:19 a.m.

Woohoo! Thanks, Edna 😊

nice tempest - Jan. 16, 2024, 5:56 p.m.

Welcome to the PUL App, friend! We're excited to continue this culinary journey together 🤗

Joe - Jan. 15, 2024, 7:09 p.m.

If I had to describe this dish in one word it would be “WOW”. Such a great combination of flavor and texture. The combination of using the sauce to flavor the sweet potato and tofu pre-bake plus the dressing to top the salad was delicious.

Will definitely add this into my regular rotation.

PUL Team - Jan. 15, 2024, 7:39 p.m.

You're incredible, Joe! Thanks for taking the time time share the lovely review. It means so much that the Roasted Sweet Potato & Kale Salad was enjoyed 🤩

anna - Jan. 9, 2024, 8:58 p.m.

Fantastic, perfect as a dinner after the gym ✌🏼

Jovana Poljasevic - Dec. 18, 2023, 11:40 p.m.

So good!!!!!!

Audrey - Dec. 14, 2023, 3:41 a.m.

Super easy to put together, and I LOVE the red onions and roasted garlic in this. The dressing was a little sharp for me, so I may add some tahini and decrease the vinegar slightly next time.
I was worried that the leftovers wouldn’t keep because I had mixed everything together, but they were still good the next day!

PUL Team - Dec. 15, 2023, 4:01 a.m.

Yayyy! Super excited to hear that the Roasted Sweet Potato & Kale Salad was enjoyed, Audrey, thank you 🫶✨

Piotr Łukaszczy - Dec. 7, 2023, 5:13 p.m.

Raquel Morais - Dec. 6, 2023, 9:07 p.m.

So simple yet so rich in flavour (and color). ❤

Genevieve Aclo - Dec. 6, 2023, 1:35 p.m.

Wow! I did not expect it to taste that good because it's kale 😅. I am from Philippines and the ingredients in this recipe are not staples in our country, which is why there were a few things that I did not expect from this dish. The sweet potatoes - which are super delicious I could eat them all by themselves - and the sauce are the best about this dish, for me. I realized that I did not make enough after I had finished a bowl of this dish by myself. Can't wait to make it again and bring it to work 😍.

PUL Team - Dec. 8, 2023, 5:57 a.m.

We're so thrilled you enjoyed the dish, Genevieve! It's fantastic that the recipe exceeded your expectations. Your enthusiasm to bring it to work is the ultimate compliment, and we can't wait for you to enjoy it again. Happy cooking! 🤗✨

Carly - Dec. 6, 2023, 5:48 a.m.

So good! The addition of avocados is just, chef's kiss 🥗

Lucile Munster - Dec. 5, 2023, 10:39 a.m.

I absolutely loved this salad. I had some leftover vegan hoisin duck and I mixed it with the salad and it paired so so well !! Will definitely make it again.

Mia - Dec. 1, 2023, 1:42 p.m.

Made this a few times over the last weeks and it is amazing! I used pine nuts this time, also a great combo. Perfect healthy meal to take to work :)

PUL Team - Dec. 2, 2023, 3:07 a.m.

We're so glad the Roasted Sweet Potato & Kale Salad has been enjoyed, Mia - thank you 🤩
