Ingredients

Bruschetta

  • 1½ cups (225 g)
    cherry tomatoes, cut into quarters
  • ½ cup (12 g)
    fresh basil, thinly sliced
  • ¼ cup (38 g)
    sun-dried tomatoes in oil, drained, roughly chopped
  • 1 tsp (5 mL)
    oil from jar of sun-dried tomatoes
  • ½ Tbsp (4 g)
    capers, chopped
  • 2
    garlic cloves
  • 1 tsp (2 g)
    onion powder
  • ¼ tsp
    salt
  • ¼ tsp
    ground black pepper
  • ½ cup (120 mL)

Toasted bread

  • 1
    large baguette, cut into rounds
  • 1 Tbsp (15 mL)
    oil from jar of sun-dried tomatoes

Directions

  1. In a bowl, combine the chopped tomatoes, basil, sun-dried tomatoes and oil, capers, garlic, onion powder, salt, and pepper. Set aside to allow the flavours to meld.
  2. Make the balsamic reduction* by pouring the vinegar in a saucepan. Cook uncovered at a gentle boil until the volume reduces to about a quarter or third of the original volume, about 8 minutes. Stir often.
  3. Brush both sides of the bread with the sun-dried tomato oil and toast on a frying pan on high heat, or in the oven on broil until the edges are golden.
  4. Serve the bruschetta with the toasted bread, drizzle over a very small amount of the balsamic reduction, and enjoy!

Notes

  • 1 - 2 Tbsp is also sufficient if you don't want to make a reduction.
  • * If short on time, mix 1 - 2 Tbsp (5 - 10 mL) balsamic vinegar in the bruschetta instead of making the reduction.

Storage

  • The bruschetta will keep in an airtight container in the fridge for up to 3 days.
  • The balsamic reduction can be kept at room temperature for up to 1 week.

Before trying this recipe, I thought I didn't like sun-dried tomatoes so imagine my surprise when I tried it and it was so delicious! This might be a very simple bruschetta recipe, but it had something different about it that I loved so much!

Delicious! Clarifying question - the instructions say to finely chop the capers but in the photo they are whole, was that instruction meant for a different ingredient? Thank you! Loving the app and recipes!

Hey Lo, apologies for any confusion, and keen eye you've got there! The original recipe had the capers chopped, and it seems for the newly updated photos that we took for the app, we missed the chopping part. With that said, it works either way. For now, I've left the ingredient note as "chopped" as I feel the saltiness of the capers are better enjoyed when dispersed throughout. You're welcome to keep them whole if you'd like though 😊

I want to know if at all make the bruschetta a bit ahead of time (let's say the same day but a few hours before my guests arrive), how am I supposed to store them and what would be the right way to serve them (do I heat them again or microwave them)

Hey Manisha, we'd recommend toasting the bread as close to serving as possible. For example, preparing the tomato mixture separately and storing it in the fridge earlier in the day, and then toasting the bread and assembling it all later on. You might find that the bread gets soggy if you toast it, assemble it all and let it cool, and then heat it again. If it's desired to prepare and assemble the bruschetta beforehand though, it would be best to leave it in the fridge if preparing it over 2 hours in advance. Perhaps sturdy crackers may also be an alternative to consider as they may not get as soggy 😊 We hope this helps for now and you enjoy the recipe!
