This smoothie bowl is made on repeat in our home. The ginger gives this smoothie a bit of spice, and the beetroot gives it an earthy flavour. If you're not a fan of either, just leave them out, which will give this smoothie more of a milder and sweeter taste.
Combine all ingredients in a high-speed blender and blend on high until smooth.
Pour into bowls and top with desired toppings. Alternatively, pour into a tall bottle and take with you on-the-go!

Strange but amazing smoothie!! I love it! I would never thought spinach, peanut butter, and ginger would be a good combination. I also appreciate that you use oranges instead of orange juice since I hate buying orange juice. Eagerly awaiting more smoothie recipes with raspberries (and blackberries?) :) Your smoothies have been essential to breaking my coffee addiction during my pregnancy so thank you! …although I am sure my neighbor hates the high speed blender buzzing early in the morning.

This was excellent! I topped with more frozen raspberries, granola and cacao nibs. I only had those cooked “Love Beets” and it worked great! I’ll definitely make this again. Trouble is I scarfed it down in under 10 minutes haha

Beets are one of the few vegetables I don’t like but I included it anyway. I’m so glad I did. I could hardly taste the beet. I mostly tasted the ginger and raspberries, but it was such a good, creamy smoothie. My favorite one so far. Not too sweet but with a satisfying spicy kick from the ginger.

Putting oranges in smoothies ist in my opinion not a good idea. But I wanted to try it out though. Even after mixing for quite long there are still peaces of the orange skin in the smoothie and fibres of the spinach, too. I personally don't like that, but possibly there are people who do?

Marvellous smoothie: creamy, fresh, and a spicy kick in the morning! It’s really nice to have a little bit of ginger and tart raspberry breaking through the sweetness. The beet root is definitely only for colour😅. I used a smooth cashew butter instead of peanut butter, as the former doesn’t have a too characteristic flavour. Conclusively, I like it very much and it’s nice to eat together with PUL double chocolate granola. However, I can imagine that your almond and coconut granola might be even better👌🏻

PUL recipes make me happy. This Immune Booster Smoothie is no exception. It's so yummy, and that's after making a couple of substitutions because of what I had on hand. I didn't have a beet or raspberries so I added an extra orange to use it up (it was getting close to being gifted to birds) and used frozen strawberries. When I make this smoothie again and follow the recipe exactly I'm sure it will be beyond delicious. Another winning recipe!
By the way, the Carrot Cake Overnight Oats recipe in PUL's Ecookbook is pure perfection. When I first opened the Ecookbook near the end of the day I planned on quickly browsing it, flagging a few recipes to try next, and giving it proper attention the next day. I stopped flagging recipes after I noticed I was flagging nearly every recipe. Carrot Cake Overnight Oats was the first recipe from the Ecookbook I tried. For that recipe alone I'd buy the Ecookbook many times over. It's so good!

I literally make this smoothie every morning for breakfast, it is so delicious and versatile. It is equally as good a smoothie or topped with granola, often leaving out the nut butter when adding granola to make it a smoothie bowl. I have found that you can sub the orange for other fruits such as mango, pineapple or apple depending on what you have on hand and it turns out great. Really great recipe <3

Hello Zee, indeed the beetroot is raw in this recipe! It helps add some colour and a bit of an earthy flavour that isn't too overpowering. Feel free to use baked beet if you prefer though 🙂
