Stewed berries are a staple in our home. We put it on everything: oatmeal, pancakes, popsicles, brownies, chia seed puddings, smoothie bowls, yogurt....the list goes on.
It's has a runnier consistency then our chia seed jam, and it's usually slightly tart, which is perfect for offsetting super sweet chocolate or syrup flavours.
This can be done with almost any fruits. Mix and match to make your own fruity combinations!
Berries are the only ingredient, and it's so easy, I generally skip explaining how to make it, but by popular request, here is the recipe. Enjoy!
How-to: Stew Frozen Berries
▸ ▹ Vegan, gluten-free, one-pot, nut-free, refined sugar-free, soy-free, nut-free
Yield: approx. 1/2 cup
Cook Time: 3-5 min
Total Time: 3-5 min
1 cup frozen berries
Stove directions: place the frozen fruit in a small sauce pan on medium-low heat, stirring occasionally until the fruits have thawed, released their juices, and are soft and mashable. Remove from heat and enjoy!
Microwave directions: in a microwave safe bowl, heat the frozen fruit for 1 minute, remove and stir, and heat again in 30 second increments, stirring between, until the berries are stewed down (about 2 minutes). The berries should be defrosted and some juice will be released. Remove from the microwave and mash with a fork until more juices seep out, but some chunks remain. Enjoy!
Storage: keep in an air-tight container or jar in the fridge for 2-3 days.
Variations: you can stew frozen or fresh fruit using this recipe.
