Ranch Flavoured Roasted Chickpeas


Does anyone else remember wheat crunch snacks? We use to be able to buy a small bag of roasted wheat for a dollar at school, and they were the crunchiest, saltiest snacks ever.

That is what our ranch flavoured roasted chickpeas remind me of (minus all that salt).

No need to enjoy these just as a snack.

It's incredibly tasty to use these crunchy chickpeas as croutons in a salad or on some soup. YUMM!!

Ranch Flavoured Roasted Chickpeas

Yield: approx. 1 cup Prep Time: 3 min Cook Time: 25-30* min Total Time: 35 min

INGREDIENTS

1 can (250g drained) of cooked chickpeas, rinsed, drained

2 tsp vegetable oil

1 Tbsp PUL Ranch Mix

Directions

  1. Pre-heat the oven to 200C/390F.

  2. In a small bowl, combine the chickpeas, oil and ranch mix.

  3. Spread the seasoned chickpeas on to a parchment-lined baking tray and roast for 25-30* minutes, or until golden and crunchy.

  4. Remove from oven, let cool and snack away. Enjoy!

Notes

  1. * I personally like my roasted chickpeas crunchy on the outside and soft on the inside, but if you like yours crunchy throughout you may want to bake them for closer to 45 minutes.

  2. Storage: store completely cooled chickpeas in a container or jar at room temperature for 3 - 4 days. It's best if the jar or container is not completely closed, so that the chickpeas can "breathe" and remain crispy.

  3. Variations: if ranch isn't your flavour, you can use this same method to make chickpeas with the following flavours: garlic, salt & pepper, salt & vinegar, cumin spiced, or even cinnamon for a sweeter version.
