This cashew cheese spread was inspired by Boursin, but it has its own unique twist. We combined creamy cashews with a touch of yogurt for a rich and tangy base, then added fresh chives and crispy fried onions for extra depth of flavour. Perfect for spreading on crackers or adding to a festive cheese board!

Prepared this for a pre-Xmas meet-up with my non-vegan friends, and we all loved it! Enjoyed it with Italian crackers.

Delicious spread. Is quick soaking in hot water also ok or is there a reason this is not mentioned?

Hi hi, Jonathan! Quick-soaking in hot water can work if you’re short on time, perhaps about 20 to 30 minutes will soften the cashews enough to blend into a smooth cream. That said, we don’t mention it here because overnight soaking gives the smoothest, creamiest texture and the most neutral flavour, which really helps for a spread like this. If you do quick-soak, be sure to drain well and blend a little longer as needed. Hope this helps for now 🫶

These kind of cheeses are even better when fermented!

Oou thanks for the idea, Deborah! In case you're interested and haven't already seen yet, our "Sun-Dried Tomato & Herb Vegan Cheese Ball" has some fermented, savoury vibes from miso. Miso is made from fermented beans and adds an umami depth 🤗✨
