Directions

  1. To a saucepan, add the oats, milk, cinnamon, pumpkin spice, and one of the bananas*. Cook at a gentle simmer for 5 minutes, stirring often.
  2. Add the other banana and the flaxseeds, cooking for 3 - 5 minute longers. Add more milk for a thinner consistency, or cook for a few more minutes for a thicker porridge.
  3. Remove the saucepan from the heat. Stir in the vanilla, plate, add desired toppings, and enjoy!

Notes

  • Nutrition tip: aim to use plant-based milk that is fortified with calcium.
  • * The banana will start to partially dissolve as it cooks, which naturally sweetens the oatmeal.

Storage

  • Store the oatmeal, without toppings, in an airtight container in the fridge for up to 2 days.

While I want to diversify my diet more soon, I'd like to say that I've been having this recipe nearly every single morning for about 6-7 months and I never get tired of it! I even leave out the Vanilla Extract, and I like to add Unsweetened Coconut Shreds and Cocoa/Cacao Nibs for flavor instead of Hemp Seeds and Pumpkin Seeds (those are still recommended if you're not consuming at least one of those elsewhere though.)

As a side note: If you're like me and have a high metabolism, you can opt to add a slight extra amount of oats and PB Milk in order to satisfy your hunger more (I do 3/4 cup of Rolled Oats and 1 1/4 cup of Unsweetened Almond Milk).

I had a question - there is so much contradicting information out there about soy milk and I see you using soy milk a lot for most breakfast recipes and I know it would be a great source of protein, but my family always advises me against it cause of the issues related to it !
Could you please enlighten me more about it and share more information on soy milk as to what’s right ?

Hey Kashvi, thanks for the question. It's so confusing with all of the information out there! We tend to gravitate towards soy milk since it offers more protein than other plant-based milks. There is controversy, but soy is safe when consumed in moderation. This is the first recipe I've made from your website. It's delicious! I soaked the oats in the soy milk for 5 minutes before cooking because I like the texture better. But I would advise others to hold off on adding the flax seed if you enjoy the traditional texture of oatmeal. We found that the flax made it all stick together in one big glob.

I was almost giving up on oatmeal when I found this AMAZING recipe omg. It’s so simple yet flavorful and comforting.
I’ve made it two times now. The first one it was perfect but the second time the bananas kinda dried out while cooking and ended in an unpleasent consistency. The first time the bananas were very brown, the second time they were more yellow (but not unripe and tasted normal before being added), do you think they dried out because they weren’t ripe enough?

If you need to be converted to loving oatmeal-- this is the recipe!! I was wanting something hearty to make my twin toddlers for breakfast. This recipe is warm, cozy, filling, and all the other good things. It also holds up really well to being re-heated. I used chia seeds instead of flax seeds based on what I had in the pantry and found it worked well.

Also my compliments on your website! The portion adjustment feature is really handy.

Hi Adam, thanks for the question. The banana helps add a creamier texture and sweetness to the oatmeal. You could omit it and for less creamy and sweet oatmeal, although we'd recommend adding some more sweetness if desired. For example, adding syrup, applesauce, more fruit (such as berries), or coconut flakes to taste. Alternatively, you could experiment with substituting the banana for a sweet and starchy replacement, such as mashed sweet potatoes 😊 We hope this helps for now!

Hey Anushka, thanks for the lovely question! Our old-fashioned rolled oats tend to cook in around 5 minutes, although you could do more or less based on your preferences. Are you using steel-cut oats by any chance? If not, increasing the temperature may help the oats cook faster if desired 😊

I have made this recipe several times now and just love it. I'm not a true vegan but find that I'm making many of these recipes over and over again. Thank you for your attention to detail and I love the idea that I can make just one portion and don't have to mess with figuring out the measurements because the system does it for you. I also like the idea of being able to check off the ingredients and steps to the recipe, so I know exactly where I am in the process. And the fact that I can substitute certain ingredients if I don't have the one called for in the recipe. I've told all my senior friends as well as all my adult children about your website so that they can all have healthier meals. It goes without saying that seniors often don't have good nutrition when cooking for themselves and most recipes are written with several people in mind so it takes time to figure out the measurements for one or two people. That's why I appreciate the way you designed your website to figure out the portion sizes.

Now it is my go to breakfast from Monday to Friday for the past 2 years (even a little bit over 2 years) and it will stay much longer, I'm sure! This recipe was my first ever oatmeal and I enjoyed it greatly! I especially loved the fact that it lasted me in the fridge for four days (I omitted the stewed fruit and added fresh fruit every morning instead)!

Hi, I have a question about a thing I've been trying out when it comes to my oatmeal. I would say I slowly perfected the recipe more and more and recently I had an idea how to incorporate even more healthy ingredients into it. I like my oatmeal really creamy and smooth so I tried using a blender to create dust-like mix of various seeds. I added this powder into the cooking oats and it turned out to be really good! So my question is - does the fact that the seeds are turned into the smallest possible pieces change anything about the nutritional value? I guess it should be easier to digest, but do you think it brings the same benefits as whole seeds/nuts? And also, would you suggest keeping this ground seed (I might also try adding nuts in the next batch) mix in the fridge? Thank you so much! Love you, Anna.

Hi Anna, so awesome that's you've been experimenting with oatmeal recipes! Both ground and whole nuts and seeds are wholesome choices. You're correct that ground seeds may be easier to digest. Nutrition-wise, it would depend a bit on what seeds you're using. For example, grinding flax seeds helps to release their oils for an increased nutritional benefit of omega-3 fatty acids in particular compared to whole flax seeds.

For storing ground nuts and seeds, we'd suggest keeping the amount needed for a short while on hand in the pantry or fridge. Storing the rest in the freezer may help prevent them from going rancid if you're preparing them in bulk 😊
