Quinoa is a protein, fibre and vitamin B-rich seed. It has a slightly earthy and nutty flavour, which is a lovely complement to the brown sugar and cocoa powder in this recipe. Coconut milk adds a velvety creaminess, making this a super satisfying breakfast option.

Directions

  1. In a medium pot, combine the quinoa, soy and coconut milk, brown sugar, flaxseed, cocoa powder, vanilla, cinnamon, and salt.
  2. Bring to a boil over high heat, then reduce to a gentle simmer.
  3. Add the banana slices into the porridge and stir. Simmer covered for 20 - 25 minutes. The quinoa should have absorbed all the liquid and the bananas should be cooked down.
  4. Remove from the heat and cover for 5 minutes before serving up to ensure the quinoa fully softens.
  5. Top with fresh berries, shredded coconut and a plant-based yogurt. Enjoy!

Notes

  • We prefer the texture of slightly overcooked quinoa, compared to slightly undercooked. If in doubt, give it an extra few minutes of simmering time.

Storage

  • Store in an airtight container in the fridge for up to 3 days or in the freezer for up to 1 month.

Hey Nancy, we enjoy adding the banana as it caramelizes which adds a delicious creaminess and touch of sweetness. You can omit it if desired though! You may want to add other toppings such as fruit or sweetener to taste then to help balance it out. We hope you enjoy it if you're able to give it a try 🙂

I made this today for breakfast. I substituted the brown sugar for maple syrup 'cause that's what I only have on hand. It is kind of similar to "champurrado" only this one tastes a lot better! I love the texture of the quinoa and the creaminess from the addition of the coconut milk. I will definitely be making this again 🥳
