1½ cups (360 mL)unsweetened soy milk

1⅔ cups (399 mL)canned full-fat coconut milk

3 Tbsp (41 g)brown sugar

3 Tbsp (21 g)ground flaxseeds

½ tspground cinnamon

¼ tspsalt

2medium bananas, sliced
Optional toppings

unsweetened coconut yogurt
Directions
- In a medium pot, combine the quinoa, soy and coconut milk, brown sugar, flaxseed, cocoa powder, vanilla, cinnamon, and salt.
- Bring to a boil over high heat, then reduce to a gentle simmer.
- Add the banana slices into the porridge and stir. Simmer covered for 20 - 25 minutes. The quinoa should have absorbed all the liquid and the bananas should be cooked down.
- Remove from the heat and cover for 5 minutes before serving up to ensure the quinoa fully softens.
- Top with fresh berries, shredded coconut and a plant-based yogurt. Enjoy!
Notes
- We prefer the texture of slightly overcooked quinoa, compared to slightly undercooked. If in doubt, give it an extra few minutes of simmering time.
Storage
- Store in an airtight container in the fridge for up to 3 days or in the freezer for up to 1 month.

I made this today for breakfast. I substituted the brown sugar for maple syrup 'cause that's what I only have on hand. It is kind of similar to "champurrado" only this one tastes a lot better! I love the texture of the quinoa and the creaminess from the addition of the coconut milk. I will definitely be making this again 🥳
