Oatmeal is a classic breakfast favourite, but if you are pressed for time, you don't want to be standing at a stove, stirring a pot. This creamy, instant oatmeal can be prepped in advance and quickly cooked in the microwave or stove, for a breakfast that is ready in less than 10 minutes.

Ingredients

  • ⅓ cup (27 g)
    quick oats
  • ⅓ cup (8 g)
    freeze-dried raspberries
  • 1 Tbsp (7 g)
    ground flaxseeds
  • 1 Tbsp (13 g)
  • 1 cup (240 mL)
    unsweetened soy milk
  • ⅓ cup (80 mL)
    unsweetened coconut yogurt
  • ½ cup (75 g)
    fresh mixed berries

Optional toppings

Directions

  1. To a mason jar or airtight container, add the instant oats, freeze-dried berries, flaxseeds, and vanilla sugar.
  2. Mix and store somewhere cool and dry until ready to use.
  3. When ready to eat, transfer to a bowl and add the milk. Microwave on high (600 W) for 3 minutes, stirring once halfway. Alternatively, heat on the stove.
  4. Add more milk for a thinner consistency if desired, or microwave for a few seconds longer for a thicker oatmeal.
  5. Finish with the yogurt, berries, and any other desired toppings. Enjoy!

Notes

  • Make your own 'quick oats' by pulsing regular oats in the food processor.
  • Nutrition tip: aim to use plant-based milk that is fortified with calcium.

Storage

  • The dry oatmeal mix can be stored in an airtight container on the counter, out of direct sunlight for up to 3 weeks.
  • Once mixed with the plant milk, enjoy this oatmeal immediately hot, or leave it in the fridge and have it the next morning as overnight oats.

YUM. I had freeze dried strawberries and fresh raspberries so I kinda swapped those. So good with the vanilla sugar!

I used frozen berries and omitted the sugar but used a sweetened (vanilla) yogurt (I hate plain yogurt), still tastes great! Although it works best with fresh strawberries, it’s quickly becoming one of my favourite breakfasts!

Delicious! I used to cook my oatmeals based on just water. With PUL app I am exploring new ways of cooking oatmeals., and I love it a lot! For this recipe I used just regular oats, as I like them more than “quick oats”. I just cooked them a bit longer (like 7 min on the stove).

Thanks for the student friendly recipes. I'm a student right now because of which I always miss my meals. But, with these easy recipes, I'm finally going to have a healthy meal.
I have one question for you. In your video, you said that we can access the student collection meals in the IOS app, but as I have the android app, how do I access those student friendly meals?

Hey Ashini, I'm so glad you have the Android app, I hope you've been enjoying it! 🤗 The student recipes are no longer grouped together under a 'Collection' the app, although the 'Collection' feature is one we will be re-introducing into the app in a few months so stay tuned for that. In the meantime, you can still view the individual recipes. For this, simply go to the recipe filters (the funnel icon on the top right of the recipes tab), scroll to the bottom, and select "New -> Old". Scroll down until you see "Berries & Cream Instant Oatmeal". The following 20 recipes all belonged to the Student Collection (it ends at the "Creamy Coconut & Mint Buckwheat Pilaf"). I hope this helps for now, but in case it also helps, there are other filters you might find helpful as a student, such as the "under 10 ingredients" filter and the "under 20 minutes" filter. You can also always pop us an email at [email protected] if there is anything else we can support with 💌

I have been feeling a tad under the weather, I made this for my breakfast and it was just what I needed. Warm, full of flavour and comforting. I used a berry yogurt and some fresh fruit and topped with some chia seeds.

I don't like the consistency of the freeze dried strawberries after heating. I will leave them out in the future or add them after heating.
I added coconut cream and cacao nibs as a topping. That was super delicious.

Great recipe! I had this for breakfast and now I know I need to make full batch of this for the future. Consistency is perfect. I used quick flakes made from millet (I am celiac with oat allergy) and it worked great with fresh raspberries and almond butter as a topping.

Hey Nazia, oat bran and quick oats are not the same - though they both come from oats! Quick oats are oats that have been rolled thinner and cut into small pieces whereas oat bran is the fibre-rich outer layer of oats 😊

Hey Sadia!! I saw this recipe I can’t wait to try it.

I have a few questions for you. First, can you make a video on some allergy friendly recipes? I’m highly allergic to peanuts, wheat, and well dairy milk with eggs. Not sure if I should consume legumes as I heard if falls under the peanuts category. Second, are quick oats wheat free or should I look for a GF option? It’s been hard trying to maneuver what to eat.

Legumes aren't typically classified under the peanut category, but it's always best to consult your allergist for personalized advice.
