Porridge

Toppings

  • 1 Tbsp (8 g)
    roasted walnuts, chopped
  • ½ Tbsp (8 g)
  • ½ tsp
    toasted sesame seeds (optional)

Directions

  1. Add the buckwheat and milk to a saucepan. Bring to a boil, reduce to a simmer, and cook covered with a lid for 15 minutes, stirring often.
  2. When cooked, add the mashed banana, cocoa powder, tahini, maple syrup, vanilla, cinnamon, and salt. Stir until heated through.
  3. Remove from the heat and cover with a lid. Let sit for 5 minutes. This helps to soften the grain further.
  4. Serve, add toppings as desired, and enjoy!

Notes

  • If using raw buckwheats, toast them first on a dry skillet over medium heat for 4 - 5 minutes until golden, stirring throughout.
  • Nutrition tip: aim to use plant-based milk/yogurt that is fortified with calcium.

Made it for the first time today. I was curious about the buckwheat and chocolate combination since I’ve never tried ot before - amazing! Definitly cooking it again, easy to make, quickly prepared, just the right consistency. Just beautiful.

If you're finding this recipe difficult to digest, i.e. it makes you feel overly tired or bloated after eating, you can solve this by soaking the buckwheat in cold water for approximately 30 minutes before cooking. Add the buckwheat to your pot, fill it halfway with cold water from the tap, and then add a couple ice cubs before stirring lightly to to make sure there isn't too much buckwheat floating on the surface. Go about the rest of your morning routine, and in 30 minutes, drain the water and follow the recipe as described. In my experience, this 30 minute soak doesn't noticeably affect the cooking time.

I loved it! ❤️ This is so innovative! I never thought buckwheat could be used for breakfast and be that delicious! 😀 Congrats for the idea and realization!
I was thinking.. since I have quite little time to dedicate to prepare breakfast and my saucepan, although non-stick, doesn’t react well (the milk does stick at the bottom after all no matter the temperature and it tends to expand and go all over the place if I don’t watch it carefully), could I soak the buckwheat for sometime? With water or milk? So to reduce the cooking time and the mess in the kitchen?? 😄 what do you think?

Hey Maria, great question. You can indeed soak buckwheat in either water or milk overnight to help reduce the cooking time. Hopefully it helps to avoid some of the sticking :)

Hey Maria, if you soak overnight you could use 56 grams of buckwheat with at least double the milk or water (closer to 150 mL) but you could also try with 300 mL if you'd like). In the morning, you can then discard the soaking liquid, rinse the groats, and cook the porridge. You'll need a bit less liquid so we'd recommend starting with around 150 mL plant milk and adding more to the desired consistency 😊

Loved this recepie! Never tried buckwheat before, so I was a bit sceptical, but it turne out great. Also, I liked how easy it was to make it, since I am not at the first-name basis with cooking. :D My kids did not really enjoy 'the little balls', as they said, so I will try blending their portions next time.

Interesting, never thought kasha could be used for breakfast. I'm from a culture that considered kasha to be a poor people's food. Considering one small box set me back $7, I think that's changed.
I like it, I added toasted walnuts because I love the crunch. My husband agrees, this recipe is a keeper.

YUM! I just stumbled upon the YouTube video featuring this recipe, and I had to try this porridge/kasha straight away . As luck would have it, I had a packet of roasted buckwheat pulled out of the cupboard already to use up for 'something' and also a frozen banana in the fridge and cacao powder to finish...

Made it first about a month ago. Since then I eat your kasha porrige on Sundays morning with my Family. We prepare a bunch of it, so every of us can eat a portion on some other day.
We live in Germany, but come from Poland, where pople eat buckweat quite often - but the recipes are soooo boring. It would be great if you could make subtitels in Polish- so even older generation, that doesn't speak English, could dive into your wonderful, jummy and healthy vegan world.

I have been cooking with kasha for ages now (white and roasted one) making waffles, soups and meatballs - but breakfast!!! this was heaven:) could you tell me where do you get white kasha in NL? (I usually ask my mum for sending it from Poland... but this is an expensive endeavour) Thanks <3

If you want the cheapest option is to see if there is local or online windmill (zuidmolen) that sells boekweit (the white ones) if you buy in bulk it is cheaper.. Or you can go to an Islamic supermarket but the usually only sell kasha and not the white ones. The other option is to go to Ekoplaza or a healt food/reform store but that's really expensive. I am not from the team but was on the hunt for boekweit for my friends. I hope this will help you out.

I’m the first to admit chocolate for breakfast is the last thing on my mind. I only try this recipe because I wanted to use the buckwheat in the back of my cupboard but I’m glad I did! This tastes like the chocolate custard and ice cream my mum made when we were kids. The best bit is that I didn’t feel hungry for ages.

Is the result the same if I roast the desired amount of buckwheat on the stove right before cooking it with the milk?

Hey Joseph, yes you can definitely toast your own buckwheat! For stove: toast it on a dry skillet over medium heat for 4-5 minutes until golden, stirring throughout. For oven, roast the groats on a baking tray in an oven at 325°F (160°C) for about 25 minutes, stirring once halfway.

This looked so good I had to make it straight away even though I had almond milk and cacao powder instead of soy and cocoa. It worked really well also, keeping this in my weekend breakfast rotation!

I just tried out this recipe - it is incredibly tasty! The consistence did not really work out, I will try to put less milk next time so that it won't be too liquid ;) By the way I can't wait for the Android version of your app to launch! :D I wanted to ask if the contents of the app and the blog will be the same or will there be some differences? For the consistency of this one, did you remove the pot from the heat and cover it with a lid for 5 minutes as described in step 3? We wouldn't recommend skipping this step to help the Kasha absorb remaining extra moisture 🙂

pranked my partner with this today 😎 they didnt expect buckwheat to be sweet and served as porridge. turned out fluffy and delicious! just a bit weird after eating buckwheat for dinner my whole life. by the way beware 2 portions in the recipe makes 3

This was my breakfast today. I was out of plant based milk, so I replaced it with water. Still - it was great breakfast, I will surely try it one more time. As celiac with oat alergy I really appreciate this option :)
