  1. Preheat oven to 375°F (190°C), and lightly grease or line the inside of a muffin tin.
  2. To a large bowl, add the ground flaxseeds and water, mix, and allow to sit for 5 minutes to gel.
  3. Once thickened, add the bananas and mash until very well combined.
  4. Whisk in the sugar, applesauce, coconut oil, and vanilla.
  5. Add the baking soda, baking powder, salt, and cocoa powder and mix again.
  6. Then add the flour, a third at a time, until just combined being careful not to over-mix.
  7. Gently fold in the chocolate (tip: reserve some for the top!).
  8. Evenly divide the batter into the prepared muffin tin. Top each muffin with the reserved chocolate chunks and bake on the middle rack of the oven for about 15 minutes, or until the top looks set and a toothpick inserted into the centre comes out clean.
  9. Allow them to cool for 2 minutes before transferring them to a cooling rack to cool completely. Enjoy!

  • Store in an airtight container on the counter for up to 2 days, or in the freezer for up to 2 weeks, ideally reheating before enjoying.

A truly awesome muffin recipe! My Toddler loves these but I want to adapt the recipe to make mini muffins instead. What would be your suggestions? Thank you.

PUL Team - April 9, 2021, 11:15 p.m.

Hi Gunja! We're so happy to hear. Halving the recipe and using a mini muffin pan may be the easiest way. We'd suggest cutting down the baking time, perhaps to ~7 mins. Using a toothpick or fork may be helpful to know when they're ready as the baking time will be less 😀

Thank you! Will give it a shot!

Hi PUL! I'm trying to create healthy snacks for my kids to avoid giving them snacks with preservatives in them. So THANK YOU so much for this muffin recipe! What "grease" did you use to grease the muffin tin in the video? and was that regular paper napkin that you used to grease it? Is your muffin tin a non-stick one? If not, what type is it?

PUL Team - April 7, 2021, 6:29 a.m.

Hey there! A vegetable oil would work for greasing the muffin tin. A regular napkin as shown in the video works well for helping to evenly spread the oil. Alternatively, a reusable napkin, pastry brush, or muffin tin liner would work. The muffin tin we use can be found at We hope this helps and happy baking 😀
