Directions

  1. Preheat oven to 375°F (190°C), and lightly grease or line the inside of a muffin tin.
  2. To a large bowl, add the ground flaxseeds and water, mix, and allow to sit for 5 minutes to gel.
  3. Then add the bananas and mash until very well combined.
  4. Whisk in the sugar, applesauce, coconut oil, and vanilla.
  5. Add the cocoa powder, baking soda, baking powder, and salt, and mix again.
  6. Then add the flour, mixing until just combined. Some streaks remaining are okay. Gently fold in the chocolate. Be careful not to over-mix
  7. Evenly divide the batter into the prepared muffin tin. Top each muffin with extra chocolate chunks, if desired, and bake on the middle rack of the oven for about 15 - 20 minutes, or until a toothpick inserted into the centre comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them to a cooling rack to cool completely. Enjoy!

Notes

  • Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead.

Storage

  • Store in an airtight container on the counter for up to 2 days.
  • Store in the freezer for up to 3 weeks.

Delicious delicious yumm I used a little less apple sauce cause I didn’t have the required amount but the were still delicious. Can you do a substitution list?

In the meantime, we haven't tested it out but have heard positive results with unsweetened soy-based yogurt or extra mashed banana in place of the apple sauce. Hey Tanvi, we haven't tested it out so we can't say with certainty. My instinct says more mashed banana might do, but the taste and texture would definitely be different. Do let us know if you experiment with the muffins though 🤗

This is a family hit! We don't make them fully vegan (use semi-sweet chocolate chips) and sometimes an egg if we don't have applesauce on hand. But they are a great way to use up our extra ripe bananas when we want a chocolatey treat instead of banana bread. I love that it gets all mixed up in one bowl for less dishes and its easy enough that my kids love to help out.

Moving on to test some of the soup recipes next!

These are def a treat like a cupcake :) I didnt have 3 bananas, so I subbed about 1/2 cup of pumpkin puree. I also added a bit of water since my batter was dry. These are super easy and tasty. Nuke for 15 seconds, and they are just perfect! They are extremely banana-y, so even with 2 bananas, the flavor of the chocolate was just slight. I would experiment with more pumpkin and less banana next time to make these a tad less sweet and banana-forward.

Hey there, Sharon, the ground flaxseeds form a gel when combined with water that helps the muffins stick together. Whole flaxseeds won't form this gel because of their outer layer so we wouldn't recommend using them. If you have access to a high-power blender or coffee grinder, you could grind the whole flaxseeds into a powder. Alternatively, you can substitute the ground flaxseeds with another ground seed, such as ground chia seeds 🙂

I tried making muffins but they always end up uncooked in the middle. The outside bakes to the point of burning whilst the inside is hollow. I use a oven like air fryer.
I omitted the oil and sugar, just ajustes the recipe to my dietary requirements.
What am I doing wrong?
I thought it was the tins but when I used ceramic ones the same thing happened.
Am I overloading the fryer? Does the expiration of baking powder matter?

Hey there, Ags, thanks for taking the time to share. If the outside is overbaked and the inside is underbaked we suspect the oven temperature is too high. This could cause the outside to crisp up too much without enough time for the inside to cook. We hope this helps for now 😊

Very tasty! And goo-y!
When I baked them 15 minutes , took them out of the oven and let them cool down and got the cakes out of their siliconmuffinshapes, the bottoms were very soggy, some parts even stuck to the bottom of the muffintin.
Did I grease the tins too much?
I ended up flipping the cakes upside down and baked them for another 15 minutes, which helped but the tops on the bottom got a bit dark.
Any tips?

Hey there, Salome, not enough baking time or not removing baked muffins from the tin to cool can promote a soggy bottom. For baking, the muffins may take longer than 15 minutes to bake depending on your oven. We'd recommend baking until a toothpick inserted into the center comes out clean.

For cooling, did the muffins cool in the tin or on a cooling rack? When muffins cool too long in the tin, it can promote a soggier texture if the steam can't escape. We can let the muffins cool slightly before transferring them to a cooling rack to avoid this. We hope this helps for now and so glad the muffins were still enjoyed 🤗

I used 2/3 of the sugar suggested and it was still good! I would say I used chocolate that was too dark so it made the muffins bitter. But otherwise a really good vegan chocolate banana muffin recipe.

That's the magic of PUL's recipe! Since we are already using so many substitutes (apple sauce, banana), the texture probably isn't as fluffy as a traditional muffin, but I prefer moist and less sugary muffins with chocolate. To me, vegan cooking/baking is not about replicating a traditional recipe, but to embrace new flavors and texture.

I'm at it again! :D
I made one substitute and reduced the amount; I used a melted butter instead of an oil and they were perfect! Moist, chocolatey, gooey, and fluffy. Smelled fabulous. The banana undertone (used two since that's all I had) was wonderful. Next time, I'll try the coconut oil :)
Taking them to work for a coworker's bday! So thankful and excited! :)

Just a fun anecdote: While having a lovely conversation with a grocery attendant about a few ingredients I was looking for, we touched based on tahini and what one could do with it. I've been using it in overnight oats going on three weeks now and with a few other dishes. I showed her my favorite brand and typed in 'tahini' in the search bar of the PUL website and she was blown away by the beauty of it all! I scrolled up and down and showed her the feature of the recipe scale, filter features, and the photos!! She was captivated by it all that she told me to stop! HA! This was after she had told me how hard it was to keep her paycheck since she works at a fun grocery store.

Delicious recipe. Made two times: first time used banana instead apple sauce, turned out still delicious but more firm, second time made it with home made apple sauce and turned out amazing and soft. These are the most amazing muffins! Even though I don't make them fully vegan, double up on the cocoa and use less sugar (I think the bananas are sweet enough to just use 100g sugar), this is my favourite muffin recipe. They are ALWAYS a hit with everyone; people especially comment on the texture which is moist and fluffy. Even my slightly critical Dad asked me to send him the recipe. :)

I usually don't love chocolate-banana anything but I'd be lying if I said I haven't eaten several of these when I got peckish... They're simply divine.

Hi Gunja! We're so happy to hear. Halving the recipe and using a mini muffin pan may be the easiest way. We'd suggest cutting down the baking time, perhaps to ~7 mins. Using a toothpick or fork may be helpful to know when they're ready as the baking time will be less 😀

What "grease" did you use to grease the muffin tin in the video? and was that regular paper napkin that you used to grease it? Is your muffin tin a non-stick one? If not, what type is it?
