I used this as a base recipe for coconut cupcakes. They were the easiest and fastest cupcakes ever I ever made. πŸ™‚
And the rice trick, amazing.
I allways had problems with greasy bottoms, not anymore. 🎊
The only problem I had was that the cupcakes were a bit indented in the middle. Is that expected?
I did use 1/3 less sugar the second time since the original was a bit sweet for my taste, especially with the frosting.

The modify function is really convenient and I used it in this case. The only thing that could make it better is, if I change the number of servings and than click modify it would reflect my modified servings. Currently I need to scale up individual ingredients and then change the servings.
Keep up the good work PUL team.πŸ₯³

Heyy there, S! Aw so glad you enjoyed them and that the rice trick worked πŸŽ‰

Hmm the indent isn't what we aim for. I suspect it's from reducing the sugar. Sugar helps with structure, so lowering it can make the centres a bit softer and more prone to sinking. If you want to reduce sweetness, it usually works better to keep the cupcake as is and dial it back in the frosting instead πŸ€—

Also, really appreciate the feedback on the modification and servings flow! In the meantime, one workaround is to modify the recipe without scaling, then use the β€œ+” or β€œβ€“β€ button next to servings to adjust it before cooking 🫢 Thanks so much for baking with us✨

All of my nieces and nephews loved these cupcakes when I brought them for Easter! I think the next time I make these, I'll add vanilla extract to the frosting.

Soo cute!!
It wasn't very easy to shape the feet, and the frosting is pretty buttery, but it goes well with the dough and it was a lot of fun!

Oh my goodness! These are adorable! 😍 I now know what I'm going to make for Easter. I even happen to have marshmallows in my pantry!

They turned out so well! Just a right amount of coconut flavor and the icing was nice and fluffy and not overly sweet. My whole family enjoyed them. I have to admit, though, that I almost didn't have a heart to eat these bunnies, because they were so cute! ❀️ Thank you for a great recipe once again!
