Have fun making those but i made it on the 30 servings measures and only ended up with a small plate size dough for cutting the cookieswith was a bumerán, had to make another batch to have enough for the party.

I tried this recipe with gluten free oat and rice flour. I also took regular butter (I had no vegan) and also 1 Tbsp maple syrup + 1 Tbsp brown sugar as black molasses replacement and they turned out amazzzing! I used the Spekulatius cookie roll thing (google it…) and they were so pretty and delicious! Thanks for this recipe✨

We’ve been making this recipe for the third year in a row as part of our Christmas cookie gifts 🎄

We set the serving size to 90 cookies and used a standard gingerbread man cutter: it yielded 46 gingerbread men and one little heart ❤️

Our cookie cutters were of varying sizes, as you can see in the photos, so indeed the amount it yields can vary. Hey Маша, we haven't tried it ourselves, but imagine you could try replacing the molasses with a combination of brown sugar and a bit of maple syrup for a similar depth of flavour. While it won't be an exact match, it'll will hopefully give you a delicious result! Just keep an eye on the consistency and adjust the dry ingredients if needed.

I would like to make these for our Christmas party. Am I able to make to have the pre-cut and frozen and bake them the day of? If so, what will the baking time be? I would also like to prep the royal icing as well. I’m assuming that would be best day. Am I able to color the icing and have piping bags prepped for us to all decorate? If so, how many hours would the icing remain pipable? Thank you PUL!

Hey Aileen, that method would work! Add a couple of minutes to the original baking time and check for signs of doneness (matte appearance, firm edges etc.) We'd like to suggest baking the cookies ahead of time, freezing them, with layers of wax or parchment paper keeping them separated, and taking them out in the morning of your party. Maybe you can leave a tray to bake in the morning if you want a fresh-baked cookie smell wafting through the house 🥰

As for the icing, although we haven't tried it, we think you could make the icing the night before. To keep the icing pipe-able, seal the piping bags tightly and store them at room temperature for up to 3-4 hours. For longer periods, refrigerate them and let them come to room temperature before use. So long as they aren;t exposed to air, they should remain pipe-able. Hope this helps for now and happy holidays!

I did not have Pupmkin Spice so I used Dutch Speculaas mix, worked well 👍🏻 and I just love this icing recipe. The best one I have ever made. Will become my go to icing 😍

I did a half batch, using a mixture of mostly almond flour and a bit of sorghum flour. They turned out so yummy and moist! I always have trouble with dry cookies because I have to be very careful as to which flour I use, but this was the perfect combo. I chilled the dough and rolled them into little balls, coated them in a bit of white sugar, and baked them. Mostly because I was too lazy to cut out shapes, but the sugar coating adds a nice texture. I love molasses cookies, and I'm so happy these worked!

I made it for kids next door. Of course it dose not have the all so sweet store board. The kids liked it. It was easy to make. I had a bit of trouble with the icing but came out pretty good! I would make it again!! Yum

Unfortunately, I don't have any butter alternatives where I live. How can I replace it in this and other baking recipes? I've heard that thick pumpkin puree gives similar results, what do you think?

Hey there, Yuzuru, we can't say for certain, as we haven't had a chance to test out alternatives. The vegan butter has a fat and water content that is tricky to get from alternative ingredients. Our first suggestion would be margarine or possibly coconut oil (coconut oil would likely result in a thinner, crispier cookie). Mashed banana, a plant-based Greek yogurt, or pureed pumpkin could also potentially work. We imagine any of these will impact the taste of the Gingerbread Cookies though, for example, adding a touch of banana or pumpkin to the taste. Do let us know how it goes if you experiment with it 🙂
