Directions

  1. Preheat the oven to 350°F (180°C). In a large bowl, cream together the coconut oil* and brown sugar with a fork.
  2. Then add the milk, maple syrup, vanilla, baking powder, baking soda, and salt and mix until well combined. The mixture might look a bit clumpy, and that's okay.
  3. Sift the flour into the bowl and stir until partially combined.
  4. Lastly, fold the chopped chocolate through the dough. Be careful to not over-mix.
  5. Scoop up 1 Tbsp of the dough at a time, and roll them into balls. Place on a line baking tray about 2 inches (5 cm) apart, as the cookies will spread.
  6. To decorate, add a few bits of chopped chocolate to the top of each cookie if desired.
  7. Bake on the centre rack of the oven for 12 - 13 minutes, or until lightly golden. Let them set on the baking tray for a minute before transferring to a cooling rack to cool completely. Enjoy!

  • Refined coconut oil is coconut oil that doesn't smell or taste like coconuts.
  • * The coconut oil needs to be solid for this recipe, and not melted. If the oil is soft, place it in the fridge until hardened.

They were so easy to make and really yummy. They just didn't spread out a lot and were still kind of dome shaped when I took them out of the oven. Still delicious and nice texture.
Could it be because I used the fan setting or normal sugar instead of brown sugar?

Hey Beri, thanks for sharing your experience with the cookies! Using white sugar in place of brown sugar may influence cookies. Other more common reasons cookies may not spread is if the fat source is too cold, the dough is overmixed, or there's too much flour. If you give the cookies another try, it could helps to let the coconut oil soften a touch and be careful to not over-mix. It can be suuuper tempting to keep folding but we only need the mixture just combined!

In case you used cup measurements, it can also help to ensure that the flour isn't too packed in the cup, but rather, gently spooned into the measuring cup and levelled. This will help avoid too much flour being added. Hope this helps for now 🤗

The comments section on the app is so helpful. I'm coeliac so it was really helpful to see someone had subbed the flour for oats. I put 276g of gluten free oats in my food processor and pulsed a few times to make flour. I otherwise followed the recipe exactly and they came out great. Now to stop myself eating them all!

Oooh great question KatyeU, I'm actually not too sure as we've never tried this before. I suspect it's a good idea to swap in a dry ingredient (Protein powder) and swap out an equal amount of a dry ingredient (flour) as you suggested, the flour does contribute to the structure of cookies. So just keep in mind the texture might be a bit more dense/dry. Another thing to keep in mind is that protein powder might absorb more liquid than flour, so you might need to add a little extra liquid to the dough to prevent it from being too dry. The protein powder might also affect the overall taste of the cookies, as well as but you can always try in a smaller amount and increase the next time you make it. It's always fun to experiment with baking!

Hey Elsa, it sounds like the coconut oil within the cookies might have been too soft before going into the oven. This can cause the cookies to spread and 'melt' too much while baking. To prevent this, you can roll the dough into balls and then place on a sheet in the fridge to firm up for 30 - 60 min. Then bake.

With baking, it also helps to weigh the ingredients in grams for more precision - it's more accurate than using cups and tablespoons if you have access to a scale. I hope this helps for now in case you give the cookies another go! Glad the taste was still enjoyed 😊

These are AMAZING! I used gluten-free 1-1 flour and my batter looked a bit too dry, so I doubled the milk content. Even with that the mixture looked too dry but the cookies tuned out fine, held their structure well, and the taste is phenomenal!

These are easy to make, yummy and soft, with just the right amount of sweetness. The dark chocolate perfectly balances out the sugar and maple syrup. Hi Jay, applesauce is often a good substitute for oil in things like cakes and loaves, but we haven't tested it in this specific cookie recipe. The recipe also calls for a significant amount of coconut oil, which not only adds fat but also gives the cookies their crispy texture and rich flavour. I'm concerned that applesauce might make them too moist and alter the texture, so I'm not sure I'd personally recommend it. That said, I'm all for culinary experiments! If you decide to try it out, let us know how it turns out 😊

These were SO yummy! I’ve tried so many vegan cookie recipes and this was by far the best. I read the reviews and swapped out coconut oil for butter as I didn’t have coconut oil. The cookies didn’t spread as much because I used chilled butter so in my second batch I pressed it down with my fingers before baking. My weighing scale also ran out of battery as I was halfway through my sugar measurement, so I took it as a happy mistake and probably used ~80g of sugar. They were still sweet enough and didn’t need more sugar. 10/10!

Made these as instructed and also made them 1:1 with oat flour. I REALLY enjoyed the texture of the oat flour in this recipe.

The dough seemed a bit dry for me so I just added a tiny bit more oil and it was perfect!! I’ve heard that more dry environments can cause this & it’s dry here right now!

Hey there, Ankit, awe so nice of you to consider making this recipe for your nephew! We've heard positive reviews for using almond flour in place of all-purpose flour, and vegan butter in place of coconut oil. As for stevia, we haven't experimented with it and imagine it will throw off the chemistry of the cookies. Stevia is significantly sweeter than brown sugar so you'd need to add much less, and using it may result in cookies that are drier, crumbly, and have less caramelization. You could try adding some more moisture, such as plant milk, and brushing the cookies with a little milk before baking to counteract this. Perhaps start experimenting with a small batch if you try out the substitutions.

My cookies didn't spread and were quite hard. Still tasted good though. But can you suggest what my error was that made them come out hard? The only adjustment I made was to leave out the maple syrup, which I didn't have.

Hey Karen, thanks for taking the time to share! There are a few reasons that come to mind, mainly not enough moisture, fat, or overmixing the dough. Did you measure using the gram and mL amounts listed, or using the cup and Tbsp amounts? In case you use cup measurements, it might help to ensure that the flour isn't too packed in the cup, but rather, gently spooned into the measuring cup and levelled. This will ensure that not too much flour is added compared to the other ingredients.

Maple syrup adds moisture to cookies, and omitting it might have resulted in a drier dough, leading to harder cookies. You could try replacing the maple syrup with an alternative like agave syrup. Overmixing the dough can also lead to excess gluten development, which can make cookies tough and dense. Mixing the ingredients until just combined is recommended. We hope this helps for now 🤗

I am just wondering about the absence of an acid in this recipe, despite the use of both baking powder & baking soda. Perhaps you can break it down for me, please? :)

In fact, I scaled up this recipe a little and froze the cookies for future use (ended up using 1 1/4 tsp baking powder + 1 tsp baking soda). Tried baking them from frozen at 165C for 14-ish minutes and the cookies did not really spread much & had a slightly metallic aftertaste. Still delicious though!

Is it very likely that I have overmixed the batter in the beginning OR even overbaked? :(((

Hey there, EJ, thanks for the questions! This recipe doesn't need additional acid because baking powder already contains an acid in it naturally 🙂

When scaling up a cookie recipe, it's generally not recommended to scale up the amount of baking powder or baking soda used. The reason for this is that these ingredients are leavening agents and have a chemical reaction with the other ingredients in the recipe. If you scale up the recipe and proportionally increase the amount of baking powder or baking soda used, you may end up with cookies that are too fluffy or cakey, and they may also have an unpleasant metallic taste.

So it's generally recommended to keep the amount of baking powder/soda the same when scaling up a cookie recipe and adjust the other ingredients accordingly.

This works really well for meals and such, but not as well for baking recipes. We've considered disabling the scaling feature for baked recipes, but then we thought people would be confused as to why scaling is possible on some recipes and not on others... so it's just a tricky situation. Delicious and super easy cookie recipe!! I used vegetable oil instead of coconut oil and baked these for 15 minutes. They still weren't as browned as the website photos, but were very tasty nonetheless and I can't wait to try more recipes on here!

Oh my goodness I can't even describe how AMAZING these cookies are! Not only are they super easy to make, but they are literally the cookies of my dreams - so soft and chocolatey and they almost melt in your mouth! I swapped the coconut oil for vegan butter and it still works great. Will definitely be making these again :)

Delicious! I didn't have vanilla extract so I added more maplesyrup instead!
The flavour being so strong reminded me of pancakes so I tell my friends they are pancake cookies :p
I also used almondflour instead which make them.. a bit more healthier! haha.

I followed instructions, only thing i used different was chocolate chips instead of broken up chocolate. and almond milk. They were dry and didnt taste very good. Dont know if I messed up but i did follow the recipe. They didnt spread out at all. And did not look like the picture. OH well

Hi there, Judy, we're disappointed to hear they didn't turn out! Cookies that come out dry and crumbly might mean there's too much flour in comparison to oil and sugar. Did you measure using the gram and mL amounts listed, or using the cup and Tbsp amounts?

In case you use cup measurements, perhaps it might help to ensure that the flour isn't too packed in the cup, but rather, gently spooned into the measuring cup and levelled. This will ensure that not too much flour is added if you give the recipe another try. It's also possible the batter may have been over mixed or over baked so considering to only stir until just combined and baking until lightly golden are two other ideas. We hope this helps for now, Judy 🙂

Oh, Judy, it's no problem at all. There are many different cooking terms it can be overwhelming! Grams is a unit of weight that can be measured on a scale. mL is an abbreviation for millilitres which is a unit of volume. We can't say for certain as we haven't tried it before, but with some experimenting, it may be possible 😃 You should be able to substitute around a third to half of the all-purpose flour with whole wheat without major changes. Adding more than this will likely require more liquid and the cookies will be denser.

Hey PUL team! I've made these cookies SO MANY TIMES and every time (even without access to all the measuring tools), they have turned out INCREDIBLE!!! This is my go-to vegan cookie recipe! I normally use coconut sugar instead of brown, and oat milk as opposed to soy. I'm drooling just thinking about them - they are heavenly! If I had to recommend one cookie recipe from the range that PUL offers - I'd say try this one first, you will not be dissapointed!

Fun story: I made a batch of 14 for our family and friends caravan trip around south-east england last summer. Initially, I thought that only the kids would finish them - but as soon as I opened the box, the parents and kids all finished them in 5 MINUTES! haha! They kept asking for more but I had to tell them that I sadly didn't have any more! It was such a hyggelig moment, as the danish would say, all of us gathered enjoying these cookies in a caravan after a lovely day out exploring is something I'll never forget :)

I love these cookies. If you follow the recipe solely, I’d rate it an 8/10, but it’s so easy to customise with great results. I’ve used golden syrup instead of maple, and added salted pistachios with the chocolate and it takes it through the roof of brilliance. I don’t even bother eating non vegan cookies at this point, they just don’t live up to these. I took these into school on the last day, and had so many people ask me for the recipe. Thanks Sadia!

I am from India and this is going to be my first time to attempt such wonderful recipes. Hence, I would love to get few clarifications.
I would like to know if I can substitute coconut oil with any neutral tasting cooking oil, say groundnut oil. Also, can we substitute maple syrup with honey.

I will preach Sadia's recipes until the day I'm gone. I'm fully serious when I say that 90% of my vegan recipes come from her, and it makes me SO excited to eat vegan. I spent the day meal prepping with 4/5 recipes being from Sadia's, each ending with a jaw drop after tasting from my mom. These cookies give the exact comforting warmth you'd expect from a Grandma's kitchen, and as I tasted it, I promised myself that the day I become a Grandma, these will be the legendary cookies I deliver! I could go on and on about Sadia, but if you have any hesitation about veganism, her recipes are the way to go. My dad isn't crazy about veganism in general, but he couldn't even NOTICE a difference in these cookies. LOVE THEM!
