Directions

Click:

  1. In a large microwavable mug, mix together the flour, baking powder, and salt.
  2. Add the peanut butter, milk, maple syrup, and vanilla extract. Mix until just combined. Be careful not to over-mix.
  3. Add the jam, and gently swirl it into the batter.
  4. Microwave on high (800 - 900 W) for 2 minutes, or until a toothpick inserted into the centre comes out clean. The cooking time may vary depending on your microwave and settings. If the cake isn't cooked through yet, simply place it back in the microwave at intervals of 15 seconds until done.
  5. Let the mug cake cool slightly, add your desired toppings, and enjoy!

Notes

  • Take care when removing the mug from the microwave. It might be very hot.
  • If preferred, bake it in the oven at 350°F (180°C) for 15 - 25 minutes, or until a toothpick inserted into the centre comes out clean. Just be sure to use an oven-safe baking dish.

Storage

  • This dessert is best enjoyed immediately.
  • Transfer to an airtight container and kept in the fridge for up to 1 day.

I was so excited to try this recipe, but my cake exploded over the top of the mug 20 or 30 seconds into the cooking time. Do you have any idea what I might have done wrong? I don't know if it had to do with my mug size (I used a dish that was wider but shallower) or with my microwave, but I checked that it was at 900 watts.
Even though it made a mess, the cake itself still tasted delicious! Thanks for sharing this recipe. :)

It was yummy, although a bit too peanut-butter-y for me. I'd add a bit less of it or replace it with something else or even don't add it at all but I don't know if it would work.

Hey Łucja! Thanks for sharing. You can totally add less peanut butter, switch to another nut or seed butter, or perhaps leave it out. We haven't tested it without peanut butter, but I imagine it will be blander 🙂
