Ingredients

  • 3 Tbsp (23 g)
    all-purpose flour
  • 1½ Tbsp (19 g)
    granulated sugar
  • 2 tsp (7 g)
    sprinkles
  • ¼ tsp
    baking powder
  • 1 pinch
    salt
  • 2 Tbsp (30 mL)
    unsweetened soy milk
  • 2 tsp (10 mL)
    vegetable oil

Directions

Click:

  1. In a microwave-safe mug, combine the flour, sugar, sprinkles, baking powder, and salt.
  2. Then add in the milk, oil, and vanilla, and mix until just combined. Be careful not to over-mix.
  3. Microwave on high (800 - 900 W) for 2 minutes, or until a toothpick inserted into the centre comes out clean. The cooking time may vary depending on your microwave and settings. If the cake isn't cooked through yet, simply place it back in the microwave at intervals of 15 seconds until done.
  4. Top with vegan whipped cream and sprinkles if desired, and enjoy!

Notes

  • The mug might be quite hot when it comes out of the microwave. Take care when removing it from the microwave.

  • Best if enjoyed immediately.

Hello! My niece and I watched the mug cake video and we’re excited to try this out on dessert night! Was the sugar used in this birthday cake mug sugar in the raw? Oo dessert night sounds fun, Jennifer! We indeed used raw sugar in the video 🤓 White granulated sugar in the Netherlands is vegan, but some white granulated sugar in North America is not, so to avoid confusion we use raw sugar for our recipes. We haven't tested this recipe with other flours. If you experiment with different flours, do let us know how it goes! We hope you and your niece have a lovely day as well 🤗

Loved the video on mug cake variations! However, since I don't own a microwave I was wondering if it would be advisable to bake them in a regular oven. Any suggestions?

Greetings, Sina! You can bake it in the oven at 350°F (180°C) for 15 - 25 minutes, or until a toothpick inserted into the centre comes out clean. Just be sure to use an oven-safe baking dish 🤩
