I asked on Instagram what kind of flavours you wanted for overnight oats. There were the expected: chocolate, coconut, almond, berry, etc. but there was an overwhelming number of people who requested a savoury flavour.
We also wanted to make an overnight breakfast recipe that didn't use oats per se (although you can if you'd like). Uncooked quinoa was a disaster, and we didn't want to have to cook rice or quinoa before using it in an overnight recipe. In came the couscous. It was the perfect base for our turmeric and tahini flavourings.
So this recipe is for those who prefer their breakfast on the savoury side. You can definitely sweeten this up with some agave syrup, berries, or cinnamon too if you'd like.
Golden Overnight Couscous
▸ ▹ Vegan, nut-free, soy-free
Yield: 1 serving
Prep Time: 5 min
Refrigeration Time: 6 - 8 hours
¾ cup (190 mL) plant-based milk*
¼ cup (38 g) uncooked couscous
2 Tbsp (30 ml) tahini
½ tsp orange zest
¼ tsp turmeric powder
Combine all ingredients together in a mason jar or air-tight container and let sit overnight in the fridge.
The next morning, top with desired toppings and enjoy!

Storage: keep in an air-tight container in the fridge for up to 2 days.
