Peanut Butter & Jelly Smoothie Bowl

Simple 5-minute breakfast recipes are the best. 

Sometimes I'm reluctant to even post about them because they just seem too easy... but I think that's the point: sharing ways we can make mornings more easy, #nourishing and oh-so-delicious. 

 I called it a peanut butter and jelly smoothie, but there's no jelly in this at all. The frozen strawberries combined with the roasted peanut butter makes it feel like the sandwiches I used to enjoy so much as a kid (and still do!). I topped it with some homemade granola to give it some extra crunch and to make this smoothie bowl more filling for breakfast. 

 

The best thing about smoothie bowls, is YOU decide what you want to top it with.

 

I also like to top it with some fruit for extra natural sweetness, seeds and granola for extra crunch, and chia seeds for extra healthy omega-3 fats, fibre and protein.

Peanut Butter & Jelly Smoothie Bowl

▸ ▹ Vegan, gluten-free, oil-free, refined sugar-free

Yield: 2 servings 
Prep Time: 5 min
Total Time: 5 min

 

INGREDIENTS: Smoothie 

2 cups (500 mL) plant-based milk (I used soy)

2 frozen bananas*

10 medium strawberries, fresh or frozen

3 Tbsp (45 g) peanut butter 

 

INGREDIENTS: Toppings

Fresh raspberries and blueberries

Pumpkin seeds

Coconut flakes

Chia seeds 

Homemade healthiest ever granola 

 

Directions

  1. Add all smoothie ingredients to a blender and blend until well combined.

  2. Pour into a bowl, add desired toppings and enjoy!

Notes

  1. *If the banana is not frozen, add 1/4 cup ice cubes to make the smoothie frosty.

  2. Variations: add any toppings you desire. Get creative with this one! You can also add hemp seeds into the smoothie while blending for extra fibre, protein and healthy omega-3 fats.
