Ingredients

  • 2
    medium yellow onions, chopped
  • 1 Tbsp (15 mL)
    olive oil
  • 2 cups (328 g)
    cooked chickpeas
  • 2
    cloves garlic
  • ¼ cup (60 mL)
  • 2 Tbsp (30 mL)
    extra virgin olive oil
  • 2 Tbsp (30 mL)
    water
  • lemon, juiced
  • 1 Tbsp (15 mL)
  • ½ tsp
    paprika powder
  • ¼ tsp
    ground cumin
  • ¼ tsp
    salt

Directions

  1. Toss the onions in oil in a large pan on medium-high* heat, stirring every 3 - 5 minutes. Add splashes of water as needed to deglaze the pan. Continue cooking until the onions are a deep golden, about 20 minutes.
  2. Place all the ingredients in a food processor and blend on high until smooth.
  3. Test test and adjust the seasoning as desired. Serve with crackers, cut-up vegetables, or enjoy in a wrap or sandwich!

Notes

  • * Depending on the pan, you made need to reduce the heat to medium, but this will also increase the cooking time.

Just to clarify, are the caramelized onions reserved for topping or blended in with the other ingredients to make the hummus? And would a sweeter balsamic fig vinegar work or do you think not? Thanks!

Hey Hazel, apologies for the confusion! The caramelized onions are indeed blended into the hummus but you can reserve some for the topping too. A balsamic fig vinegar sounds delicious! 🤗

This sounds fantastic, and will be making it. I love caramelized onions! Have you ever tried using different beans in hummus. I have tried white bean hummus and it’s a little more mushy but I can’t tolerate chickpeas.

Hey Donna, we're glad you're excited to try it! Caramelized onions add a delicious flavour to this hummus. We've used general white beans, butter beans, and yellow split peas in other similar dips successfully. They do offer a slightly different taste and texture than chickpeas but you can always adjust it to taste 🤗

Thank you for this recipe too it was delicious and the first time I eat hummus and I liked it so much that I made it this week end too😆. I ate it with carrots, cherry tomatoes, red bell pepper and whole wheat bread and if you know of other vegetables that would go well with it please tell me 🙂

Easy to follow recipe. I used less lemon juice as it was quite strong and a bit more water (I had chick pea water I added instead of regular water), hummus tastes yummy ☺️

Nice variation on the regular hummus! Nice condiment for vegetables. As I didn’t have balsamic vinegar at home, I used pomegranate syrup for the sweetness. It works quite well😌
