Crispy potatoes are one of life’s simple joys. These air fryer potatoes are golden, crunchy, and perfectly seasoned, like little bites of happiness. They’re easy to make, too - no flipping or fussing over a hot pan. Just toss, air fry, and enjoy. Whether you’re serving them as a side or sneaking a few straight from the basket, they’re always a hit.

Ingredients

Potatoes

  • 6
    small potatoes, peeled, cut into 1½ cm chunks
  • ½ Tbsp (9g)
    salt
  • ⅛ tsp
    baking soda

Spiced coating

  • 2½ Tbsp (38ml)
    vegetable oil
  • ½ tsp
    salt
  • ½ tsp
    garlic powder
  • 1 pinch
    ground black pepper

Directions

  1. Add the potatoes to a large pot and cover with cold water. Bring to a boil.
  2. Once boiling, add the salt and baking soda, then cook at a rolling boil for 8 - 10 minutes.
  3. Combine the coating ingredients in a small bowl. Preheat the air fryer to 400°F (200°C)*.
  4. Drain the potatoes and add them to a bowl. Gently toss with the dressing.
  5. Transfer the potatoes to the air fryer basket. Cook for 10 minutes**.
  6. Shake to flip the potatoes, and cook for another 10 - 15 minutes, or until crispy. Enjoy!

Notes

  • For us, 6 small potatoes weighed 600 g. For best results, use starchy potatoes such as Russets. All-purpose varieties like Yukon Golds also work.
  • * If baking in the oven instead, line a baking tray and preheat to the same temperature using the fan setting rather than conventional top–bottom heat.
  • ** If using an oven, bake for 30 - 33 minutes in total, or until golden. Stir once halfway.

Storage

  • The air-fried potatoes are best when still hot and crispy!
  • Store leftovers in an airtight container in the fridge for up to 2 days.

Nice to see you back! The potato recipe is great, thanks. Only thing, as yuo live like me in the Netherlands, are the starchy potato the so called "kruimig"? I am so confused about potatoes here... in Italy you tell the greengrocer what you want to cook and they give you the roght potatoes :D

Hi hi, Giovanna! It’s so nice to connect again, and thanks for the lovely question ☺️ In the Netherlands, “kruimige” potatoes are the closest match to what we mean by starchy potatoes in this recipe. They break down a bit more when cooked, which is what helps create the fluffy inside and crispy edges.

If you can’t find clearly labelled kruimig, “iets kruimig” (all-purpose) potatoes also work well and will still give tasty results. They're just slightly less fluffy inside. FYI "vast koken" is the waxy kind. Hope this helps for now 🥔

General question about airfryer recipes - can they be made in a regular oven as well?

Heyy Edith, thanks for the question! Most air fryer recipes can be made in a regular oven. The main difference is that the oven usually takes a bit longer to crisp things up. For this recipe, you could spread the coated potatoes evenly on a parchment-lined baking sheet and roast at about 425°F (220°C). In a conventional oven, this will take around 25 to 35 minutes, flipping halfway through. In a fan (convection) oven, they’ll usually be ready a bit sooner, so start checking from about 20 minutes. Roast until they’re golden and crispy. Hope this helps for now 🫶

Can I use baking powder

Hey there, Jadamarie! This recipe uses baking soda to help the potatoes get extra crispy by changing the pH of the water. Baking powder won’t have the same effect, so for the best texture, it’s best to stick with baking soda. If you're in a pinch, you can skip the baking soda, just note the texture might be a little less crunchy ☺️
