Pomme Duchesse

Duchess potatoes, or pomme de terre duchesse, are potatoes puréed with butter and spices, then baked to a golden perfection. They can be piped or moulded into various shapes, but we chose a classic rosette! Serve these delicious golden potatoes as a side or have them as a glorious snack or appetizer.

C'est bon et beau, mais malheureusement la forme ne suffit pas à faire une Pomme Duchesse. C'est un nouveau défi à relever, réussir à trouver l'onctuosité de l'oeuf dans la pomme de terre pour donner cette texture et douceur si particulière

They are delicious, but my piping tip didn’t work for such a thick paste so they came out more 💩shaped, but my kids are loving that 😂 Will definitely make again.

Hi Nour, aw glad that the kiddos are enjoying it 😅 If the paste is too thick for your piping tip and you give the recipe another try, you could thin it out slightly with a bit of plant-based milk or use a larger piping tip. Happy cooking!

My piping bag broke and so did the ziplock bags I tried so I ended up rolling the potatoes into little flower shapes. I pressed six little balls together and flattened/smushed them together, topping the centres with sesame seeds. They came out looking adorable and were so tasty!

Why do the potatoes have to cool completely before adding the ingredients? I accidentally added them while hot. Did I ruin the dish?

I have an answer to my own question 😊: they will probably hold their shape better, if the potatoes are cooled down. Am I right? The taste was great! My daughter even saved the leftovers for tomorrow’s lunch. And she doesn’t even like potatoes, so that says a lot!

Didn't have a nozzle so I just dolloped them onto a tray. They didn't look as cute but they tasted delicious!
