I would like to make this for a dinner party. Can I prepare it the day before? What would you suggest

We'd recommend prepping the filling and the beet slices the day before, then storing them separately in the fridge. This helps prevent the beets from releasing too much moisture into the filling, which makes it softer. I couldn’t manage to transform the beets in thin slices for the ravioli, but still, all the flavours was delicious. Wonderful combination!

This was a wonderful way to showcase the beets, and such a pretty dish. The filling was a little heavy on the nori for my taste, but everything still came together nicely.
