Cooked beets are a staple in the PUL kitchen, and they're super easy to make. We'll showcase 2 methods to cook up beets: steamed on the stove, and roasted in the oven. The cooking process brings out their inherent sweetness, making them a delightful addition to any meal. Their juicy taste and bright colour can enhance various dishes, from adding a pop of colour to salads, being a tasty topping on toast or sandwiches, to colouring pasta with their natural hues.

The pressure cooker also works great. I put beets in the Instant Pot for 30 minutes. Let depressurize naturally then peel and put in the fridge. I chop and dress some in oil and balsamic so they can be tossed into salads or sandwiches.

I also sometimes boil mine and use the cooking water in soups and smoothies. No nutrients down the drain ;-)
