The pressure cooker also works great. I put beets in the Instant Pot for 30 minutes. Let depressurize naturally then peel and put in the fridge. I chop and dress some in oil and balsamic so they can be tossed into salads or sandwiches.

I also sometimes boil mine and use the cooking water in soups and smoothies. No nutrients down the drain ;-)
