I was so excited for this recipe cause I thought it sounded so delicious! And I did like it at first, but I kept getting this bitter taste that I couldn’t get away with added sweetness. Is there something I could back off of to make it more of my preference?

You could try reducing the ginger or shallot slightly to see if that helps. Letting the dressing sit for 10 to 15 minutes before serving may also mellow the sharper flavours a bit. Alternatively, if you'd prefer a sweeter flavour profile, adding a touch more syrup or mirin could help balance things out (though it sounds like you maybe already tried that). Thank you! After having the leftovers a day later I will say the bitterness did subside a little! But I think I will try it again and reduce the ginger, shallot and let it sit longer!

Not my favorite :( The raw shallot was not pleasing, and I didn’t love the citrus flavor either.

The recipe is great and my Japanese husband is very happy. However, I wonder if the amount for soba is very little for four people, unless it's meant as appetizer.

Tip for those who can't find mirin, substitute with equal parts rice vinegar and real maple syrup. Ex: 1 Tbsp mirin = 1/2 Tbsp rice vinegar + 1/2 Tbsp maple syrup.
