4.9 oz (140 g)shiitake mushrooms, thinly sliced*

1½ cups (225 g)frozen shelled edamame beans, thawed

1avocado, sliced

6small raw radishes, sliced (optional)

1stalk green onion, thinly sliced

1 Tbsp (9 g)toasted sesame seeds

Directions
- In a mason jar or bowl, mix together the rice vinegar, tahini, miso paste, soy sauce, crushed garlic, sesame oil, maple syrup, and grated ginger.
- In a saucepan cook the soba noodles according to the package instructions, then drain. For us, this took about 5 minutes.
- Meanwhile heat up a large pan on high heat with the oil. When hot, add in the mushrooms and edamame beans and cook until softened, about 5 minutes.
- Then add the soba noodles, and dressing. Let everything heat up for 2 minutes.
- Divide the noodles between your bowls, and top with sliced avocado, radishes, green onions, and sesame seeds. Enjoy!
Notes
- * This recipe has a pronounced vinegar taste. If you'd prefer, add less vinegar.
Storage
- The noodles can be stored in an airtight container in the fridge for up to 3 days.

I omitted miso (didn’t have any), and only used 2 tbsp rice vinegar and 1 tbsp tamari soy sauce (full sodium) and it was good.
if you want it less vinegar-y, would replacing it with MIRIN work or would that change the entire flavour profile too much (though could still be good?)
Can't wait to try this. Would you recommend this as a work lunch meal prep or is it only good when consumed super fresh?

I've never tried Miso paste before but this recipe was really really good ! I like the mixture of all the different tastes and just how simply it all comes together ! I will definitely be doing this recipe again :))
I made these noodles today and must say it had an interesting and unusual taste. I never used miso paste and rice vinegar before, so I guess I need to get used to it. I will give this recipe still five stars though since I substituted many ingredients I didn't have (mie noodles instead or soba noodles, button mushrooms instead of shitake, no edamame and avocado), and that maybe changed the original taste a bit. Overall, it's a good recipe and helped me out a lot today since I didn't know what to prepare for the evening, so thanks a lot :).

Very quick and easy. Only had brown miso paste so think I’d cut the amount in half next time if using it. It was perfect for a fast dinner when I was already hungry and had no idea what to fix. Lots of umami from the mushrooms & miso. I cut the sesame oil down to lower fat content.

OMG! This was SO delicious! We used tamari and pad thai rice noodles to avoid gluten, which worked perfectly! It was vinegar-y, but not too strong for us. And super quick to whip up. SO GOOD!

All the grocery stores near me were out of soba noodles for whatever reason, but I still had all the other ingredients, so I tried this recipe both with rice noodles and with whole wheat noodles that I had on hand. It was still really good, but I'm excited to try the real deal once soba noodles are back in stock at my area.
The vinegar was a little much for me the first time I tried it. But on my third day of leftovers, my palette had gotten used to its strong taste, and I fully enjoyed it.

Ugh this recipe is AMAZING. I loooove how vinegary it is. I'm also gluten intolerant so I used Seaport Farms Edamame noodles instead and they worked great. Loved this recipe! The flavors were SO good. I did have to sub in natural peanut butter as we were out of tahini, but it worked out pretty well. The husband wasn't too keen on the vinegar zing or the mushrooms, but the kiddo fully approved of everything. Paired this alongside baked marinated tofu and it was a very satisfying meal. More 20 minute meals please!

I switched rice vinegar to ume vinegar, because it Is not that 'distinctive'
