2 Tbsp (28 g)unsalted vegan butter

7.1 oz (200 g)shiitake mushrooms, sliced

2stalks green onion, sliced

1 Tbsp (15 mL)dark soy sauce

½ tspgarlic powder

¾ cup (105 g)frozen shelled edamame
Directions
- Fill a saucepan with boiling water, and add the udon noodles. Cook for 2 minutes, then drain.
- Meanwhile, add the butter and mushrooms to a large pan on high heat. Cook until the mushrooms are lightly golden, about 4 minutes.
- Add the drained noodles, green onion, soy sauce, mushroom sauce, and garlic powder. Cook for 1 minute.
- Lastly, add the edamame beans and cook until heated through. Enjoy!
Storage
- The noodles can be stored in an airtight container in the fridge for up to 2 days.

I am not a mushroom fan but this recipe seemed easy and frankly in the past 6 weeks I've made it twice because it was just that easy and so delicious.

Swapped the mushroom sauce with teriyaki bc I didn’t find it in the store and the dark soy sauce for kecap manis. But still turned out tasty!!

I am so so obsessed with this recipe!! Somehow even “quick” recipes always end up taking me much longer than they’re supposed to (maybe I’m slow at chopping?) but this one is actually lightning fast to make! I’ve made it twice already and I’m always surprised by how quickly it comes together and how flavourful it is despite the minimal ingredients! Like others have mentioned I wasn’t able to find mushroom stir-fry sauce where I live so I just used a generic one. I also subbed in portobello mushrooms because my grocery store didn’t have shiitakes. I scaled the seasonings up to 1.5tbsp soy sauce, 2.5tbsp stir fry sauce, and 3/4tsp garlic powder, and used twice the vegan butter. This has definitely become an instant staple for me, thank you so much!! ❤️

Delicious and filling. Both servings were for me so I was glad 😊 I went back to the store to get more mushrooms so I can make it again the next day. I did take a few liberties because I am not vegan but I love the meatless option. I could find the mushroom stir fry sauce so I chose a sesame ginger shoyu sauce. I cleaned my bowl. ❤️❤️

Tasty! I didn’t have the mushroom stir fry sauce so I experimented. Instead of adding the soy sauce and stir fry sauce, I used the whole sauce mix recipe from one of my favorite recipes by pickuplimes- the spicy garlic tofu dish- and I think it worked out pretty well.
This is just lovely and so quick to make. I discovered mushroom stir fry sauce a while ago and am always happy to find new recipes using it. I used button mushrooms instead of the shiitake and had the noodles with a side salad. Delish!!

I did not have mushroom stir fry sauce, but I made it with a sauce pulled from a separate recipe that had used gochujang, maple syrup, vinegar, and soy sauce as its components. Delicious!

I love the taste and how quick and easy it is to make! :D I used brown champignon because I didn't know where to buy shiitake and forgot to buy spring onions but still it tasted amazing. Also I'm glad I've been introduced to a new sauce - the black bean garlic paste.
