2 Tbsp (28 g)unsalted vegan butter

7.1 oz (200 g)shiitake mushrooms, sliced

2stalks green onion, sliced

1 Tbsp (15 mL)dark soy sauce

½ tspgarlic powder

¾ cup (105 g)frozen shelled edamame
Directions
- Fill a saucepan with boiling water, and add the udon noodles. Cook for 2 minutes, then drain.
- Meanwhile, add the butter and mushrooms to a large pan on high heat. Cook until the mushrooms are lightly golden, about 4 minutes.
- Add the drained noodles, green onion, soy sauce, mushroom sauce, and garlic powder. Cook for 1 minute.
- Lastly, add the edamame beans and cook until heated through. Enjoy!
Storage
- The noodles can be stored in an airtight container in the fridge for up to 2 days.

Maybe weird, but mixed the soy with peanutbutter, turned out realllly good (I love a bit more creamy textures) delicious recipe either way!
This was delicious. I didn’t have mushroom sauce, so I added a bit of miso. It was really good!
