Chili Oil Noodle Salad
This dish is inspired by Szechuan Liangmian (四川凉面). It features chewy noodles, crunchy vegetables and a mix of spicy, umami flavours that will tingle your tastebuds. It's the perfect noodle salad to have on a hot sunny day, or to take with you to a picnic or potluck. For this recipe, we use a Taiwanese noodle brand, but feel free to use any type of Asian noodles you like!Servings

When following the instructions with the oil, the peppercorns and flakes immediately burnt to a crisp when they went into the pot as soon as I saw the smoke rising from the oil. Is there a temperature one should shoot for rather than just “smoke point”?
