Can I use tempeh instead of seitan?

Heyy Deborah, oouu tempeh could work! We'd recommend crumbling or tearing it into bite-sized pieces, similar to the seitan. The texture will be a bit firmer and less chewy, but it will still pair nicely with the sticky gochujang glaze 🤗 For the best flavour, you could also steam the tempeh for about 10 minutes first to mellow any bitterness, then continue with the recipe as written.
