For this dish, we took inspiration from different Asian cuisines to create a salty, umami sauce that is served over chewy rice cake sticks. This type of rice cake is known as "garae-tteok" (가래떡) and is most commonly known from the popular Korean dish "tteokbokki" (떡볶이).

If you couldn't find the rice cake sticks anywhere, what would you recommend as replacement? Sticky rice, noodles, or something else?

Hiii Kim, hmm rice cake sticks have a really unique chewy texture, so they’re a bit tricky to replace exactly. If you’re looking for the closest alternative, thick noodles (like udon or flat rice noodles) would work best. They won’t be quite as chewy, but they’ll still pair really nicely with the sauce. Sticky rice could also work. Honestly, the best part is the saucy mince topping, so any base you enjoy should be delish. Hope you enjoy the recipe if you're able to give it a try 🫶

We didn't have any gochugaru, so we used smoked paprika mixed with chili as an alternative. It was quick and easy to prepare. Thank you!

Hi! Can you suggest a brand of veggie ground? I can’t understand what is this product. In Italy we either have tvp or something like beyond mince 🤔

If there is no veggie ground available, brown some crumbled tofu in the pan with the oil of your choice and flavour it with garlic powder, onion powder, smoked Paprika and a Bit of soy Sauce - optional you can add some nutrional yeast to enhance the umami flavour or some chili powder to give the „mince“ a little heat kick.

Our veggie ground is from a local grocery store called Albert Heijn. It has a dry texture and resembles already-cooked ground meat, so it's most similar to an already-made ground mock meat. Other brands that offer similar products are Vegetarische Slager and Vivera. If you don't have access to any of these, another alternative is something like Beyond Meat, but these usually need to be fried a bit first to brown them, and then you can use them as we did in this recipe. Hope this helps for now ☺️
