Quick Garlic Chili Noodles

12 min

10 ingredients or less

This is a quick dish that you can prepare on busy nights when you just don’t really feel like cooking but want something homemade that's equally as quick and delicious as takeout. The noodles are packed with flavour and heat, and the broccolini gives the dish a satisfying crunch.

Optional garnish

  • toasted sesame seeds

  1. In a large pot, cook the noodles according to the package instructions, for us this took 3 minutes.
  2. Meanwhile, add the oil to a large pan on medium-high heat. When hot, add the garlic and light parts of the green onion. Cook for 2 minutes. Then add the gochugaru and cook for 1 minute longer.
  3. Drop the heat to low and add the soy sauce, vinegar, and use tongs to add the noodles from the pot to the pan, without draining the cooking water. Mix everything together.
  4. Add the bok choy and edamame to the pot of boiling water in which the noodles were cooked. Bring to a boil and cook for 3 minutes, or until cooked to your liking. Then drain.
  5. Serve the noodles in bowls, with the bok choy served alongside them. Garnish with the dark green part of the green onion and sesame seeds if desired. Serve the edamame on the side with a sprinkle of salt overtop. Enjoy!

  • Gochugaru is made from Korean dried red chili peppers, also known as taeyang-cho. Red chili flakes can be used, but are spicier than gochugaru.
  • Black rice vinegar is mostly used in Chinese cuisine and made with fermented glutinous rice. It has a deep, robust flavour and is sweeter than red and white vinegar.

  • The noodles are best when enjoyed immediately, but can be stored in an airtight container in the fridge for up to 2 days.

I eat these probably once a week now!

Alicia - Dec. 1, 2022, 11:18 p.m.

Do you sell a cookbook? It's so much easier than looking online, for some of us. I haven't been able to find one, but maybe I'm not looking in the right place?

PUL Team - Dec. 2, 2022, 8:59 p.m.

Hey there, Alicia, thanks for the question and interest in the PUL content! Our 3-year anniversary e-cookbook containing all recipes up until the end of December 2019 is available here: https://www.pickuplimesblog.c…. Hopefully in the future we can share a physical cookbook 😃

Alicia - Dec. 2, 2022, 10:54 p.m.

Thanks so much! I really appreciate it.

SW - Nov. 4, 2022, 11:13 p.m.

I made restaurant-style with broccolini and edamame tonight. So good!!! I’m just blown away recipe after recipe that I try of yours. . I’d expect a good one here and there from a source. But time after time yours are a 10/10. So many lifetime keepers. Thanks!

Have anything up your sleeve for a mothers woman's group? We do a monthly brunch style potluck roughly 15 people. Would love to share with them one of your creations.

PUL Team - Nov. 5, 2022, 12:23 a.m.

So glad it was enjoyed, SW, thank you! The kind words and support mean so much 🤗 Monthly brunch sounds so lovely too. A few ideas include our Leek and Spinach Tofu Quiche (…), Cinnamon Buns (…), or Potato Hash Cakes with Baked Marinated Tempeh (…)

SW - Nov. 5, 2022, 12:27 a.m.

So many Thanks. Can’t wait to try these with my ladies group.

Sue - Nov. 2, 2022, 11:41 p.m.

Really good...but, the next time I make it I will not add as much chili flakes as this was just way to spicy. Even for my extra spicy loving husband. My lips are still burning. Thankfully I made a lot of bok choy, so it toned it down some. I adjusted the servings to 4 so both my husband and I could have it tonight and tomorrow which then called for 2 tbsp of the time I'll do just 1 tbsp.
Otherwise, super good.

PUL Team - Nov. 3, 2022, 6:33 p.m.

Hey Sue! Did you use red chili flakes or gochugaru? Red chili flakes can be used, but are spicier than gochugaru so we'd recommend starting with less. A lovely idea to modify based on your spice preferences in any case though. Happy cooking 🙂

Sue - Nov. 4, 2022, 12:54 a.m.

I did use the gochugaru. Yes, will most certainly use less next time. Really good in spite of being too spicy for us. Love all your recipes!

JJ - Nov. 5, 2022, 2:50 a.m.

Same, I found it way too spicy for my palette so will definitely cut down the spice next time. But so so good!!

Kelsey - Oct. 31, 2022, 8:10 p.m.

Literally just finished eating this and had to leave a message! This was so tasty 😋 adding this into regular rotation

PUL Team - Nov. 2, 2022, 4:21 a.m.

We're so happy to hear, Kelsey - thank you for taking the time to share!

Manavi - Oct. 28, 2022, 9:24 p.m.

Oh my god, this was so good I had to make it three times over in the same evening! I made it restaurant-style with 2 tbsp sizzling oil per portion, and it was amazing. My new favourite dinner! Gochugaru is a magical ingredient. Thank you!

PUL Team - Oct. 30, 2022, 2:11 a.m.

Woop woop 😃 we appreciate it ss much, Manavi!

Sara - Oct. 26, 2022, 8:36 p.m.

Amazing !!

FS Cassim - Oct. 26, 2022, 3:21 a.m.

So delicious, take away flavour at home, but still healthy!

Leah - Oct. 26, 2022, 2:39 a.m.

Mmm.. This recipe was delicious! I sawpped out bok choy for broccoli, (I'm allergic) but it was still amazing, although i'm not suprised, I love your recipes! I shared it with my picky girlfriend, and even she loved it! (Im also not a good cook). Thank you so much for this recipe!

PUL Team - Oct. 26, 2022, 5:10 a.m.

So glad it was hear, Leah, such a lovely compliment!

Lisa - Oct. 25, 2022, 12:17 a.m.

We had to make some substitutions to what we had on hand, like ramen noodles and shallots. This is definitely going on our weeknight list. Our 1 year old devoured it!

PUL Team - Oct. 25, 2022, 7:14 a.m.

Aw so glad it was enjoyed - even by the little one! Love the substitutions too 😊

Charlotte - Oct. 23, 2022, 2 p.m.

I loved how easy and quick this recipe was, not to mention utterly delicious!! I used brown rice noodles to make it GF which worked very well. I especially loved the addition of edamame in their shell as a side. I hadn't had these in ages and they were a real treat!

PUL Team - Oct. 23, 2022, 8:02 p.m.

Woohoo - it means so much to hear, Charlotte 🤗 and a lovely idea to use brown rice noodles!

Annie - Oct. 23, 2022, 1:14 a.m.

I can't believe how easy and deeply satisfying this was to eat. I used ramen noodles as I didn't have anything else; very delicious! Many thanks for sharing :)

PUL Team - Oct. 23, 2022, 7:46 p.m.

It means so much to hear, Annie! So glad it was enjoyed 🤗

Anna - Oct. 22, 2022, 10:13 p.m.

We tried both version. The restaurant style turns out better for me, but my partner prefers the one with less oil. It will become our staple. Thank you a lot! ❤️

PUL Team - Oct. 23, 2022, 7:44 p.m.

Ooo we're so glad they were enjoyed, Anna! Thank YOU 😊

Sara Campbell - Oct. 20, 2022, 6:51 a.m.

Omg this recipe is CRAZY good. I made it for lunch on Monday and twice again since then (and it is only Thursday). Simple with incredible flavor and an absolute breeze to slam together. I couldn’t find black vinegar at my local grocery store, so I just used seasoned rice vinegar and it still worked out beautifully. Thank you for another winner!

PUL Team - Oct. 21, 2022, 5:12 a.m.

Oh, Sara, thank you for the glowing review! You're too kind ☺️

Quinn - Oct. 19, 2022, 3:05 a.m.

I loved this recipe so much! I didn't have any wheat noodles, so I used instant ramen, (also because I didn't have enough time) and it was so rich and flavorful. Would definitly make this again!

PUL Team - Oct. 19, 2022, 6:45 a.m.

Thank you for taking the time to share, Quinn, it's so appreciated! Happy cooking 😃

Kristen - Oct. 18, 2022, 2:25 a.m.

So delicious! My husband and I never had garlic noodles before. We used pad Thai rice noodles to keep it gluten free. And we found the gochugaru at Whole Foods. Super easy to make and we doubled it for leftovers (we love leftovers!). The gochugaru is a nice zesty flavor, without being spicy. Thank you SO MUCH for sharing this recipe. Yum!!)

PUL Team - Oct. 18, 2022, 3:30 a.m.

Mmm sounds lovely! It means so much that the recipe is being enjoyed, Kristen, thank you 🥰

Saorise - Oct. 18, 2022, 12:22 a.m.

Wow! tried making this for lunch, and it was AMAZING! I made this for myself and packed it for my lunch, and the flavor kept for almost 6 hours! Would definitly make this if I had friends over and needed a quick, easy meal. I love your recipes! 🥰

PUL Team - Oct. 18, 2022, 3:21 a.m.

Aw you're the best, Saorise, thank youuu! 🤩

I really loved this quick noodle recipe. Made it for lunch. Very easy and super fast and that's what I need but super delicious

Delicious quick and easy meal. Perfect for this time of year when you want something warming and comforting which is also hassle free to make. I will definitely be having this again.

This recipe is AMAZING!! Thank you! It was very easy to follow and the flavor was on point. I never had boiled bok choy before but I'm going to incorporate it into meals more often now.

Aw, Edith, the glowing feedback means so much - happy cooking!

Brittney - Oct. 16, 2022, 5:04 a.m.

I just tried this recipe and it was Delicous!! I subbed the wheat noodles with pad Thai rice noodles and it was super good! I would love to see more quick easy meals.

Sandhya - Oct. 15, 2022, 8:24 p.m.

So yummy, added some fresh lemon juice, and bit of brown sugar. So satisfying!

Mmm sounds delicious, Sandhya!

Chris - Oct. 15, 2022, 7:27 p.m.

As soon as I saw this video on YouTube, I had to make this! First, I searched for gochugaru and black rice vinegar in the Asian grocery store and then I got to work. This was really good, thank you for posting this recipe. The only change I made was steaming the Bok Choy instead of boiling and serving it with Ume Plum Vinegar, Flax Oil and Gomashio (from the cookbook "The Kind Diet" by Alicia Silverstone, so very yummy). Please post more recipes that only take 15-20 min - I love to eat but I don't like cooking ; )

PUL Team - Oct. 16, 2022, 6:57 p.m.

Oh, Chris, we're smiling from ear to ear! Steaming the bok choy is a lovely idea. We hope to share more quick and easy recipes in the future. In the meantime, here's a collection of 20-minute meals or less in case you're interested and haven't already seen our recipe filter page:… 🤗

Nina - Oct. 15, 2022, 6:02 p.m.

Great quick recipe. We just used what we had (regular chilli flakes but a little less and mie noodles) and it tastes better than take out. I agree that you need a side of veggie and protein. I think we will just add some bell pepper or carrot and edamame directly to the noodles next time.

PUL Team - Oct. 16, 2022, 6:52 p.m.

We're so thrilled it was enjoyed, Nina, thank you!

Stef - Oct. 15, 2022, 1:46 a.m.

Sadia, loved this recipe. Even my partner, who barely likes anything, loved it! We only didn't get it as saucy as you as we cooked 5 servings. But flavor was on point. Thaaanks :*

PUL Team - Oct. 15, 2022, 3:30 a.m.

Thanks for taking the time to share, Stef! Just in case you haven't already seen it, the green "+" button by the servings number can be used to help scale the ingredients proportionally 😃

Stef - Oct. 15, 2022, 8:54 a.m.

Yes I used the button. It was super helpful, thanks!❤

Denise - Oct. 13, 2022, 11:51 p.m.

Actually had everything on hand to make this recipe, and may I say: yummy! So fast, so easy, and SO GOOD! Thanks PUL!

PUL Team - Oct. 14, 2022, 7:25 a.m.

Woohoo! Thank YOU, Denise 😊

Viktoria - Oct. 13, 2022, 7:09 p.m.

Made it right after I saw the notification of the video haha! I added some leftover carrots which I thinly sliced. And what can I say - it’s always a pleasure to cook something from PUL, tastes amazing and delicious! 🤌❤️

PUL Team - Oct. 14, 2022, 7:09 a.m.

Mmm love the addition of carrots, Viktoria, and so glad it was enjoyed 🤗
