Chow Mein Base

½ Tbsp (7 mL)vegetable oil

1 cup (168 g)mock "chicken" pieces, torn into shreds

1 Tbsp (15 mL)vegetable oil

1medium onion, thinly sliced
-
2cloves garlic, minced
-
5.3 oz (150 g)vegan chow mein noodles
-
¼napa cabbage, thinly sliced
-
2carrots, julienned
-
1head of bok choy, thinly sliced, stems and leaves separated
Optional garnishes
-
toasted sesame seeds
-
sliced green onion
-
crispy chili oil
Directions
- Combine sauce ingredients in a jar or small bowl.
- Add the oil to sauté pan on high heat. Cook the mock chicken pieces until golden. Transfer to a plate and set aside.
- Add the some more oil to the now-empty pan. Cook the onion and garlic in the pan until the garlic becomes golden.
- Then add the cabbage, carrots, and white stems of the bok choy. Cook for 3 - 4 minutes.
- Meanwhile, cook the noodles according to the package directions. Then drain and rinse with cold water to stop the cooking process.
- Add the mock chicken back to the pan along with the bok choy leaves. Cook until warmed through.
- Stir through the cooked noodles, then pour over the sauce and toss to combine. Cook for 3 minutes to allow the cornstarch to thicken.
- Serve with green onions and sesame seeds. Enjoy!

Excellent! I used different veg and Shandong ramen noodles. I also used tofu dredged in cornstarch and Chinese 5-spice. There wasn't enough sauce for hubby and I, so I doubled that part of the recipe.

This is so delicious and such a nice change from my usual recipe roster, especially because it sneaks cabbage into my diet (which I normally struggle to enjoy)! I love the sauce in particular, it really brings the dish together and I'll be using it with other veggie combos. A lot of chopping but very easy to make and it comes together in around an hour! Really recommend it!

I didnt have bok choi or the cabbage but i used edamame instead! For some reason I thought the finished product was lacking a bit of flavor? Or it didnt really taste as rich as I thought it was gonna taste. Maybe because the noodles sucked up all the sauce? But i added more soy sauce, rice vinagre, agave syrup and siracha and that did the trick! Overall great recipe! ❤️

I was really excited to try this recipe after watching the YouTube video, and it sounded very promising that the whole PUL team was obsessed with this dish. Unfortunately, I found that the dish lacks a bit of flavor and that extra oomph that I was hoping for. I won't make it again. It is important to note that I'm Vietnamese and used to bolder flavors, so this version does not do it for me.

My husband came in while I was watching this video, and said “Yum, that looks good. Are you gonna make it?” We immediately went to the grocery store and got bok choy and napa cabbage, which I’ve never cooked with before. I already had all the other ingredients! We both loved the delicious flavor, textures, and healthful goodness of this dish. I loved how simple, quick and easy it was. I even enjoy the zen of veggie prep. It’s a good thing this keeps in the frig for a few days, cuz the recipe for 3 servings made enough for 6. (We always save room for dessert.)

I made this last night for me and my husband. The only change I made was to make 1.5 times the sauce. I had a LOT of vegetables and the original amount seemed just a bit scant to me. I also added some fresh mung bean sprouts to the scallion and toasted sesame seeds as a garnish. By using store-bought shredded carrots, this came together in a little over 30 minutes. I also found that my "chiken" strips didn't shred that well, so just cubed them and it worked perfectly. We actually liked that the cubes had a bit of bite that you might not get with shredding. All in all, this dish had so much flavor, great textures and was a real comfort food. So much better, fresher, lighter than restaurant Chinese food. I had leftovers for lunch and it was wonderful! I will gladly make this again.

I was so shocked at how tasty this dish was! I have made asian-inspired dishes in the past and it never tastes as good as when I get it take-away, but this one tastes BETTER than take-away. Will definitely be making this one again (and again!).

I was searching for an easy and quick recipe for a delicious meal, and when I came across this one claiming to be effortless, I thought I had hit the jackpot.
But alas, this recipe turned out to be more of a dream than a reality. Not because it's easy and fast (35 minutes total prep time? Really?), even tough I have at least 10 years of cooking experience under my belt. I may not be the most skilled chef, but for goodness' sake, can we at least get an accurate estimate of the preparation time, from grabbing the vegetables in the fridge to properly chopping and organizing everything?
The option to scale up the recipe is a nice touch, but did anyone bother to check if it actually works after altering the quantity of servings? It's not just about creating a widget to multiply the zeroDotSomething variable (what on earth is a 0.67 napa cabbage anyway? The world uses grams/kilograms or at least the cumbersome imperial system), if in reality, you need an industrial-sized kitchen to combine everything.
This isn't the first impractical recipe I've tried, but because my wife enjoys your site, I thought, "Let's give it a try." Nevermore.

It was a really delicious recipe. Probably took me an hour from getting ingredients out to completing cooking. I thought there may be too strong a flavour from the sesame oil but it was absolutely fine . This will be a regular recipe for us. I used savoy cabbage in place of the Chinese cabbage. I always get confused when soy sauce is in the recipe. As you know Sadia, in The Netherlands we have sweet and salty soy sauce. I can never tell which one to use, because they both give a different taste. Which one is used here, please? Maybe you can give me the name of the brand so I can get that one. Otherwise I have ketjap mani, ketjap asin, and Japanese soy sauce. Not only do all three of them taste differently, but the consistency of each varies as well.

Just made this for lunch and it was such an amazing fast recipe that really impressed everyone. Added some ginger because I had some and it worked with the flavors. Next time I might try finishing with some fresh lime juice just for some extra zing (though it wouldn't be traditionally chow- mein-y).

Thank you for sharing this simple and delicious recipe! Didn't have a bok choy at hand, so replaced it with a few celery sticks (for stems) and some spinach (for leaves) - and it turned out great! Next time will stick 100% to the recipe just to see if I didn't miss out on any interesting nuances to the flavour by messing a bit with the indregients. ;)

This was absolutely delicious and very flavourful! I didn't have to add any additional salt or other seasoning. And took me 30 minutes, start to finish :-)
Instead of bok choy and napa cabbage I used swiss chard - we have a lot of it growing in our garden right now so that was what I had to use, plus carrots and bell pepper. I think this recipe will be good with a variety of vegetables and proteins.
Bomb recipe!
I didn't have sriracha, so I subbed gochujang. No napa cabbage or bok choy, so I used about 2/3 of a head of green cabbage. No bouillon cube so I left that out. I 1.5x'ed the sauce and added more carrot, plus used edamame instead of fake chicken. It was easy and tasted good. Next time I'll add more gochujang and chili crisp for heat.
Hmm- this was OK. I felt like it lacked flavor unfortunately so I doubled the sauce ingredients and added some gochujang. Not sure I’d make this again but it was a quick dinner to throw together and will last me all week for leftovers.
