Yum! Tried this recently and will definitely be making it again. Very tasty and refreshing. I reduced the garlic a bit - I only used 2 small cloves. We had quite a bit left, so the next day I poured it over a block of silken tofu for a light lunch. Delish! Thanks again, PUL. Champions! 🙌🏼

I loved this! The Farmers market was overflowing with cucumber this summer so having a quick and tasty salad to use them for was perfect. Very refreshing and very flavorful, and super easy to put together.

Cucumbers aren’t my favorite, but this was delicious! I added thinly sliced sweet snack peppers and ate it as a side salad with the yakisoba.
