Caramel Coffee Crunch Ice Cream

A favourite among the Pick Up Limes team, this ice cream does not disappoint. The slight bitterness of the coffee compliments the candied pecans to perfection, and the chocolate chunks add a nice crunch too. Coffee lovers, this one is for you!

I'm still blown away by how good vegan ice cream can taste when it’s not just fruity sorbet, though finding the ingredients here in Macedonia was a real mission. I used your recipe for the condensed milk; I couldn't find caramel syrup, so I just thinned out some thick vegan caramel sauce with water instead. I also subbed in walnuts caramelized with agave since I couldn't find pecans, but honestly, all the extra effort was totally worth it. #icecreamlover😋🍦

Aww Tanja, we love hearing this! Your substitutions sound so delicious, especially the caramelized walnuts! So glad all the extra effort was worth it and that you enjoyed the result ☺️

How can I adapt this recipe to make it in the Ninja creami?

Hiii Celina! We haven’t tried this one in a Ninja Creami ourselves, so we can’t say for certain how it would turn out. We’re not too familiar with the creami settings, although perhaps someone else can chime in! If you give it a try, we’d also love to hear how it goes ☺️

My non-vegan bf loved it

Just to clarify the caramel is a flavor and not for sweet or caramel, like a ribbon. I don't really use that and wouldn't want to buy it just for this so could we just do actual caramel? Or omit it for a coffee ice cream?

PUL small logo PUL Team - Aug. 23, 2026, 11:50 p.m.

Hi Jacqui! The caramel syrup is a light and runny flavouring syrup (the kind that's used for flavouring coffee), rather than a thick caramel sauce or caramel ribbon. You can omit it if you don't have any on hand, but I highly recommend it if you can get yours hands on it as it's a lovely flavour combo for the ice cream. If you use a regular caramel sauce instead, perhaps start with half the amount the recipe recommends, since the will be thicker and more concentrated, and could make the ice cream a little too sweet or affect the texture 🤗✨

Ok, so technically I haven't tasted the finished result yet, but I licked out the bowl and it was already to die for!
I added a few crumbled up biskoff cookies as well because I had them, I think that's going to be a nice addition.
Also, I already tried your ice cream base about a week ago for a freestyle biskoff ice cream and it was amazing.
Can't wait until tomorrow for when it's ready! Another great recipe 💘

Aww the bowl-licking test is a pretty good sign😍 and Biscoff cookie crumbs sound SO good in this, Niki! Love that you’ve already been playing around with the ice cream base too ✨

This caramel ice cream is amazing! I can’t believe how good it tastes, especially since it was made at home. ❤️
