Ingredients

  • 1 cup (240 mL)
  • 3 cups (720 mL)
    unsweetened coconut milk beverage
  • 2 tsp (10 mL)
  • ¼ cup (60 mL)
    water
  • ¼ cup (50 g)
    granulated sugar
  • 2 tsp (2 g)
    espresso powder

Directions

Click:

  1. Pour the brewed coffee into an ice cube tray and freeze.
  2. In a pitcher, combine the coconut milk and vanilla. Store in the fridge until ready to use.
  3. In a large bowl, add the water, sugar and espresso powder and whip with a electric hand mixer for 4 - 5 minutes or until soft peaks form. Alternatively, you could also whip it by hand using a whisk which will take about 8 - 12 minutes.
  4. To serve, add the coffee ice cubes to a glass, top with half of the coconut vanilla milk, and top with half the whipped coffee.
  5. Stir and enjoy.

Notes

  • The coffee whip can be re-whipped, if it's starting to deflate before it's served.

Storage

  • The coffee ice cubes can be stored in the freezer in the ice cube tray for up to a week, or remove from the tray and keep in an airtight container or bag in the freezer for up to 1 month.
  • The vanilla coconut milk can be stored in the container for up to 3 days.

Just brilliant! Coffee ice cubes, I mean.. you know what I mean. This took the usual Dalgona iced coffee to another level. I will make this with almond milk (will add some cashew cream for thickness!)

Love the whip! I make a quarter of the recipe because I make it just for me and apparently my glasses are tiny. My hand mixer is temporarily out of commission so I tried whipping it with one of those battery powered milk frothing wands and it took only about a minute to be super smooth and fluffy. Definitely recommend using one of those if you have one.

This drink was so much fun to make (and drink!). I have a deep fear of not having enough coffee and always brew too much - I'll store leftovers in the fridge usually but made ice cubes this time. What I appreciate about this drink is there is no rush to drink it before it waters down. The perfect sip while reading a book and soaking up some sunshine. (I used Califia Farms Toasted Coconut & Almond Milk and did not add vanilla. It was on point.)

I've tried all of the three iced coffee recipes and to be honest, I don't know which one of them is my favorite! All I can say is that this one is a very interesting one and I've never tried a similar one before. These recipes definitely made my summer days!

This was my first time trying coffee whip and it is magical!! It blows my mind a little that it is made just using water, coffee powder and sugar! Me and my boyfriend both enjoyed this drink and actually made the recipe stretch to four portions (our glasses must be small!). Husband & I watched the video together - he's a coffee enthusiast and I'm a fan. He made this recipe for me the following day and it is absolutely the best coffee drink I've ever had. So delicious and perfect in every way. I really loved sipping on it while watching the coffee cubes melt and swirl into the milk.
We had it again the following day with oatmilk instead of coconut milk and it was just as good. This one's a keeper!

This is such a delicious and luxurious way to start the day! Especially in California heatwaves x.x I honestly thought I would mess up making the coffee whip, but it's actually really easy! I ended up using oat milk instead of coconut milk because that's what I have on hand. It was still very tasty but I'm excited to try it out with coconut milk next week.
