This beautiful blue latte is not only Instagram-worthy but it's absolutely delicious! The blue powder comes from butterfly pea flowers and can be used to make a caffeine-free herbal tea. The plant is most common in South East Asian countries, but due to its popularity, it can now be found in many countries around the world. Pro tip: scale up the recipe to make a large batch of the powdered mix for quick lattes on-demand!

To make the powdered mix

To make the lattes

  • 2 Tbsp (30 mL)
    boiling water
  • 2 cups (480 mL)
    barista oat milk**

  1. Add all powdered mix ingredients to a bowl or jar and give it a stir***.
  2. To make one latte, add 2 tsp of the powdered mix to a glass, add 1 Tbsp (15 mL) of boiling water. Give it a good stir to dissolve the powdered mix.
  3. Then add 1 cup (240 mL) of hot barista oat milk (or any other milk of your liking), stir and enjoy!


  • * You may be able to find butterfly pea powder from your local health food store, or online.
  • ** Nutrition tip: aim to use plant-based milk that is fortified with calcium.
  • *** Make-ahead: in the photos and video, we batch-made 15 servings of the powdered mix. To make a larger batch as we did, simply use the scaling feature to scale up the recipe to your desired number of servings.


  • The prepared drink is best if enjoyed immediately.
  • The dry powdered mix can be stored in a sealed mason jar in a cool and dry place for up to 6 months.

This was super fun to try and really yummy! Has a sorta light herbal flavor too me. We had to order the butterfly pea powder off Amazon, and it came in a nice small bag (I was worried it would come in a giant bag!). We used coconut sugar instead of regular sugar and that worked great to add some mild sweetness. It’s a nice change from classic coffee lattes. Thanks for another great recipe!

I'd never heard of this butterfly pea powder before so when I saw your recipe I was keen to give it a try. I loved the subtle flavour combined with the spices and the colour is truly amazing! 🤩 With foamed milk on top it is akin to a smurf exactly!
