Directions

  1. To a food processor, add the tofu, melted chocolate, vanilla, cardamom, and half the sugar. Blend until smooth.
  2. To each of the serving glasses, add ¼ cup of raspberries. Lightly mash the raspberries with the back of a spoon or tamper.
  3. Reserve about ¼ of the blended chocolate mixture in a bowl. Divide the remaining between your glasses over the mashed raspberries. Place the glasses in the fridge while preparing the next layer.
  4. To a large bowl, add the whipping cream, cream stabilizer, and remaining sugar. Whip on medium-high with an electric hand mixer for about 7 minutes, or until stiff peaks form. Reserve some of the whipped cream as a topping if desired.
  5. Then add the reserved blended chocolate mixture to the remaining whipped cream and gently fold together.
  6. Remove the cups from the fridge and add some raspberries (or other berries) as the next layer.
  7. Then divide this whipped chocolate mousse between the glasses.
  8. Top with the reserved whipped cream and any desired garnishes. Enjoy!

Notes

  • Melt the chocolate in a microwave or on the stove, using a double boiler. Let the chocolate cool off a bit.

Storage

  • This dessert is best enjoyed the same day it's made.
  • Store leftovers in the fridge for up to 1 day.

Made this and everyone loved it! Will be honest, I was lazy so I made only 2 layers: the choco + whip layers (didn't do the middle layer of combining) and it was sooo delicious. Wil be making it again for sure!

Two layers sound equally delicious! So glad it was enjoyed, Tanya 😃

Hi, can I omit the cream stabiliser?

PUL Team - Aug. 11, 2022, 3:18 p.m.

Hey Kelly, the stabilizer helps the liquid firm up and keep its shape. You could omit it but the whipping cream may end up thinner and won't keep for as long in the dessert 🙂

Kate - June 20, 2022, 12:23 a.m.

What cream stabilizer did you use? Thanks!

PUL Team - June 22, 2022, 3:32 p.m.

Hey Kate! The cream stabilizer we use most often is from Dr. Oetker, although anyone from your local grocery store should work fine. We hope you enjoy the mousse if you're able to give it a try ☺️

Hi PickUpLimes Team!
This recipe is amazing! I'm in love with all the shots in the video & here, they are so beautiful :)
I'm just wondering, why would we use melted chocolate instead of cocoa/cacao powder?

PUL Team - June 10, 2022, 10:46 p.m.

Hi Esther, thank you for the kind words! We prefer melting the chocolate for its fresh chocolate taste and creamier mouthfeel. You could likely use a high quality cocoa powder, such as Dutch-processed cocoa powder, in place of the chocolate if desired. We're not confident on the portion amount though as we have not tested it out. We hope you enjoy the mousse if you give it a try 😊

Sat - June 9, 2022, 6:17 p.m.

Hi Sadia, would you suggest any alternative to silken tofu? Any non soy option. Thank you.

PUL Team - June 10, 2022, 10:23 p.m.

Hey there, Sat, we haven't experimented with it so it may take some adjusting but avocado or creamed banana may work nicely. Do let us know if you test it out 😃
