Chickpea Brownie Batter

A rich, fudgy brownie batter made with chickpeas that’s meant to be enjoyed as-is. Chocolatey, satisfying, and surprisingly wholesome, perfect for spooning, dipping, or spreading.

Directions

  1. In a food processor, combine the chickpeas, nut butter, condensed coconut milk, cocoa powder, milk, vanilla, and salt.
  2. Blend until completely smooth. For the best texture, it’s better to slightly over-blend than under-blend.
  3. Remove the blades and fold in the chocolate.
  4. Enjoy right away or chill briefly for a firmer, fudgier texture. Top with more chopped chocolate if desired, and enjoy!

Notes

  • We use 50 - 60% cacao chocolate for a balanced sweetness. Darker varieties (70%+) can make the result too bitter.

Storage

  • Store in an airtight container in the fridge for up to 3 days.
  • The batter firms up when chilled; let it sit at room temperature for a few minutes before serving.

I was hoping to be raving with the current recipe as is like everyone else. I love PUL recipes. But I honestly found it really lacking in flavor with these quantities. Needed more sweetness and salt too in my opinion. So ended up adding more the delicious sweetened condensed milk (great recipe by the way!) and even a little maple as well as a little bit more vanilla and flaky salt.

Thank you for sharing your experience with the brownie batter recipe, Adi 🫶 Indeed, this one isn’t quite as sweet, as we were aiming for more of a wholesome snack than a dessert. That said, the tweaks you made sound perfect! I’m a big fan of adjusting any of our recipes to suit your preferences ✨ If you try it again, using a slightly sweeter chocolate (around 50% cacao) also helps add sweetened (compared to a darker % cocoa chocolate). And so glad you enjoyed the condensed milk recipe - whoop whoop! 😊

I feel silly for asking since it hasn’t been brought up by anyone else. By “cooked chickpeas” do you mean canned chickpeas? Like washed and drained? Or would I need to cook chickpeas with the whole overnight speaking situation? 😅

Hi hi, Adi! Oh it's not silly at all, it's such a good question 🤗 yes, by “cooked chickpeas” we mean chickpeas that are already soft and ready to use, so canned works perfectly here. Just give them a good rinse and drain, and you’re good to go! One standard can (about 15 oz / 425 g) yields roughly 1½ cups (245 g) of cooked chickpeas 🙌

If you happen to have dried chickpeas and prefer to cook them from scratch, that works too, but it’s not required for this recipe. The canned route keeps things nice and easy 🫶

Made it the other day and it is so delicious! As many others I've used maple syrup and was wondering whether dates might work as well? Topped it with a bit of sea salt and it was absolutely scrumptious!

Oooh dates - we haven’t tried it ourselves, but it could work! We’d suggest using soft Medjool dates and blending them really well with a splash of plant milk for a smooth texture. They’ll add a slightly more caramel-y flavour and may be a touch less sweet than maple, so feel free to adjust to taste 😊

Yum! This brownie batter is incredible! I’m not a fan of peanut butter, so I swapped it for PUL almond butter. I’ve also found past PUL recipes calling for cocoa powder to be, too, cocoa powder strong, so I reduced the amount from 4 tbsp to 3 tbsp. Lastly, I’m a huge chocolate fan, so I doubled the chocolate.

It was very delicious immediately after blending, but it certainly improves in the fridge. It came out closer to 4 servings for me, and one had some delicious vegan marshmallows. Yum! I even enjoyed it for breakfast.

This is my new favorite way to eat chickpeas!! 😄 This stuff is seriously so delicious that it's hard to believe it's good for you. It turned out fluffy and smooth, and not overly sweet (by the way, I used maple syrup instead of condensed milk). It's tempting to keep eating it by spoonfuls, but it also provides a nice contrast to crisp, sweet slices of apple. I will be making it again, for sure! 😋
