Hiii Frances! The S'mores in a Jar can be made up to 3 days in advance, although they do need to be kept chilled because the chocolate custard isn't shelf-stable. If you're bringing a cooler with plenty of ice, they should travel well! We'd also recommend toasting the marshmallows just before serving, if possible, for the best texture. These are so fun!! A perfect summertime treat. Don't have to heat up the house by heating the oven, easy and quick to make. It was worth the effort to find Digestive biscuits (not very common where I live) as they softer perfectly under the pudding. The pudding itself was nice and thick, and not overly sweet. I wasn't sure what to do with the marshmallows, as I don't have a blow torch for kitchen use. My son to the rescue! He used his blow torch (that he uses to fix cars) and it work perfectly. π Everything went well together, just like in a traditional s'more. Yum! π

Could shortbread cookies be substituted for digestive biscuits?

Hiii Bonnie! We haven't tested it ourselves, but we imagine shortbread cookies would work π
They'll likely create a softer, more delicate base than digestive biscuits, which are a bit sturdier and have the classic graham cracker-like texture. The flavour should still be delicious, though, with a richer and more buttery note β¨
