Hiii Bonnie! We haven't tested it ourselves, but we imagine shortbread cookies would work 😊
They'll likely create a softer, more delicate base than digestive biscuits, which are a bit sturdier and have the classic graham cracker-like texture. The flavour should still be delicious, though, with a richer and more buttery note ✨
