Ok seriously this was so easy, quick and fun to make! Not complicated at all! And we loved it!! At christmas the whole table was raving about it. It's a genius recipe. A creamy and little bit foamy texture and bright sweet from the freeze dried strawberry powder and condensed coconut milk. ( I just put freeze dried strawberries in my blender for powder) The basil makes the ice cream look so beautifull. You don't taste the basil that much but I can still recommend still using it.

I am thinking of making this for christmas. Can I make it several days to a week beforehand and keep it in the freezer? Is it good creamy and scoopable like 'roomijs' can be when you scoop it if it is ou5bof the freezer for a little bit? How long do you advise?

Heyy Loes! Aw this would be such a fun treat for Christmas. Yes, you can definitely make it ahead of time. It freezes well and will keep for up to 1 month if stored in an airtight container that's well covered, so making it several days in advance is totally fine. In terms of texture, it does stay creamy and scoopable (some small ice crystals might be present). It’s easiest to scoop if you let it sit on the counter for 5 to 10 minutes before serving. Hope it turns out amazing 💗🎄

Is it possible to use fresh/frozer strawberries?

Hello Salome! Hmm we imagine you can use fresh or frozen strawberries, but they’ll add more moisture (and so therefore potentially ice crystals) and a milder flavour. We'd recommend blending and simmering them into a thick purée first for the best results. That’ll help keep a creamy texture while still adding a strawberry touch 🍓

Great question, Freya! We haven't tested it with an ice cream machine but imagine you can absolutely adapt this for an ice cream maker. Instead of whipping the cream separately, just mix all the base ingredients together (including the unwhipped cream) and chill the mixture well in the fridge. Once it’s nice and cold, pour it into your ice cream maker and churn according to the manufacturer’s instructions. When it’s almost done churning, you can gently swirl in the strawberry jam or fold it in afterward before freezing. I hope that does that trick - let us know how it goes! 🍓💛
